How Can Anybody Cook Beans Without Bacon Fat?

It's just too hot to eat ... yet I get hungry. I love salads, just don't like to make 'em. It's like the noble sandwich, something which always tastes better when made by somebody else. In my household we eat salad wraps (my recipe soon to be published) a lot, and they are quite filling, easy to make and not boring, but ... seems like the summer menu options are much less interesting and varied than those for the fall and winter. 

I'm happy with my Cheerios and blueberries for breakfast every morning but supper time (as we call it in the south) is always a challenge.

Have you tried pasta salads. I love them because you can just keep adding ingredients to any leftover origial recipe and eat it all week long. I start with a basic recipe of pasta, onions, tomatoes and meat, such as roasted chicken; the kind you buy in the deli at the supermarket. Then the next day add chopped carrots and celery, cucumber, radishes and/or whatever produce I have on hand and grated parmesan cheese. The next day I scour the fridge and add any good leftovers I can find. It's fun to see how far I can stretch the Pasta Salad. I serve with heated frozen garlic bread you get from the freezer section.
