Georgia Peach Salsa

This salsa had a wonderful and unique flavor. I only used about two peaches (fresh peaches are a must!) and then used 3 tomatoes rather than two. I also only used a half of the ranch seasoning packet. I just ate it with tortilla chips, but I think this would be good with chicken or fish as well. Thanks for a yummy and different salsa recipe!

This allowed me to recreate one of my favorite dishes from a local restaurant! Frying the tortillas is essential! Topped them off with sliced black olives, shredded lettuce, shredded monterrey jack cheese, salsa and sour cream! Thanks for a great recipe!

Ham 'n' Cheese Mashed Potatoes

These have a wonderful flavor! When short on time I have used 4 cheese flavored instant mashed potatoes and they taste just as good! I would reduce the cream to about a 1/4 cup to make sure the potatoes do not get too runny.

Slow Cooker Chicken Taco Soup

I loved this spicy soup! I used a jar of homemade salsa instead of the Rotel, added some extra spices (garlic, cumin, chile powder and Chipotle tabasco sauce). Also used chicken broth instead of beer and added 4 oz. cubed velveeta to the soup to give it a creamier texture! Will make again!

Dill Dip III

This was really yummy but I did have to make a few adjustments. The mayo was a little too overpowering, so I added an extra cup of sourcream. I do not recommend using Miracle Whip for this recipe - way too sweet! I also added 2 cloves of chopped garlic and some onion powder in place of the grated onion. Served it with rye bread and it was a hit!

Sausage Jalapeno Poppers

These are always a hit for parties (especially with the guys!) - usually add a little shredded cheddar to the cream cheese along with a dash of garlic powder. Be really careful with the jalapenos though - the fumes can take your breath away! Great to cook on the grill too.

Cheese Ball I

I got lots of compliments on this cheese ball over the holidays! I took one person's suggestion and added some chopped chipped beef, cut the cheese down to 2 cups and I ended up using an extra package of cream cheese to mellow out the salty flavor. I made one small cheese ball and rolled it in a walnut/parsley mixture and then patted the remaining cheeseball mixture around the outside to form a kind of cheeseball within a cheeseball. I then rolled that in walnuts and parsley as well. Thanks for a great recipe!

Southwest Chicken

I love the versatility of this recipe. I usually marinate the chicken breasts in oil, taco seasoning and garlic before cooking. I place the chicken breasts in aluminum foil and add the black bean, tomato and corn mixture on top with some cooked Mexcian-style rice and then baked them in the oven until the chicken is cooked through. The flavors really combine nicely. A great recipe alone but can also be used for a tasty enchilada or burrito filling. Thanks!
