Lemon Thyme Chicken

Delicious recipe! I only had lime on hand so I used that in lieu of the lemon. Very good! When I have lemon on hand, I'll definitely be making this recipe again.

Thai Pineapple Chicken Curry

Wow! This tastes like a Thai dish that I've ordered at a restaurant. Very easy and delicious. Though I did have to modify the amount of chili paste.

Flourless Peanut Butter Cookies

Strawberry Avocado Salad

I just tried this salad and it was incredibly good. So good in fact that my boyfriend and I ate the whole thing in one sitting. That was the first time that ever happened with a salad. I did make the substitution of using balsamic vinegar and only used one tablespoon of sugar. What a delicious meal. Next time I plan on using spinach instead of lettuce. This salad is a definite must try for anyone considering it.

Chicken Scampi II

Very good recipe although pretty fattening with all the oil and butter. I did add some white wine to the dish and instead of preparing my chicken as directed, I actually prepared mine homeade shake and bake style with breadcrumbs, herbs and cheese. Delicious, especially with the addition of the wine to the sauce. I also added more garlic to the sauce for extra flavor. I served it over fettucini noodles with some summer squash, zucchini, asparagus and red peppers. Everything came out great. Restaurant quality.

Baingan Bharta (Eggplant Curry)

What a delicious meal! I made almost as directed but I substituted rice sour cream since I am lactose intolerant. I also deveined the pepper and took out most of the seeds so the meal wasn't too overly spicy. This was a fantastic meal. Not very pretty but don't let that turn you off. I wish I had doubled the recipe. I would definitely add more tomatoes next time. Another benefit, the house smells great after the meal has been cooked. What a wonderful aroma.

Simple Beef Stroganoff

I thought this recipe was not bad as a base recipe. By no means would I just make it as is since it would be way too bland and too thick. However, I decided to spruce it up by adding a cup of red wine, a cup of rice milk, rice sour cream (I'm lactose intolerant), a teaspoon of paprika, and some dried parsley to the sauce. When I was browning the meat, I added some fresh garlic and onions. Also, I hate mushrooms, so I used cream of onion soup. This was my first time making a beef stroganoff and I thought it went pretty well. I will make this again with the adjustments I mentioned.

Ginger Veggie Stir-Fry

Very good stir fry recipe. I made it with frozen stir fry vegetables and added more soy sauce and water than the recipe called for so I could have more of a sauce. I also added sesame seeds and extra garlic. Delicious.

China Lake Barbequed Steak

I just finished eating this steak and it was great. I made it in a hurry and didn't get a chance to marinade the meat. I used some thin flank steaks and made it in a skillet. I also threw in some onions as well. After that, I cut up the steak and made tacos. Incredible. I'll definitely be making this again.

Chicken Cilantro

I just made this recipe today for my boyfriend who loves cilantro and he was not that impressed. The concept is actually really good however in my opinion the recipe needs some tweaking. The reason for this is that the rice and hominy together in the same pot created a mush that was not at all attractive either tastewise or visually. My recommendation is either cook the rice separately and leave out the hominy (substitute corn) or make it into a soup. For the soup, I will only use 2 chicken breasts, half a cup of rice and I will not use hominy since the hominy and rice pretty much have the same consistency. Next time I plan on using corn and adding some lime juice, a little cayenne powder and also chicken stock instead of water. Also adding some chopped cilantro that has not been pulverized might be a good idea.
