Creamy Nacho Dip

Raw Vegetable Salad

Really good. I steamed the cauliflower and broccoli for 4 minutes to soften it, but have it still be crunchy. Dressing was really good. I used cashews instead of peanuts (my preference). I added chopped red bell pepper for extra crunch, colour, and vitamin C. After it all chilled for 4 hours, it was SUCH a good salad!

Summer Pepper Salad

Lovely, tasty, fresh. I used 2 Tbsp EVOO and 1 TBSP balsamic vinegar, 1 tsp honey, pinch of salt, fresh ground black pepper, and some oregano. Added a small amount of black olives for colour and flavour. Really hit the spit!

Easy Cherry Tomato Corn Salad

Very nice and fresh! The only change is I used a small, finely chopped Thai bird chili instead of jalapeno, as I live in Thailand and they are everywhere for free. :)

Pesto Chicken Florentine

Lovely. I avoid processed food, so I made my own Alfredo sauce and my own pasta. I marinated my chicken for 1 hour in a bit of olive oil, bit of lemon juice, fresh garlic, and pepper. Served on whole wheat spaghetti. As is, I'm sure is lovely too and better for when one doesn't have time to spare.

Homemade Black Bean Veggie Burgers

Really good. Added 1/2 cup refried black beans - helps it hold together. I made the patties and froze them on waxed paper on a cookie sheet. Pan-fried in a little olive oil, 6-7 minutes per side. The freezing gets rid of the falling apart issue.

Classic Macaroni Salad

I make pasta salads about once a month. I was craving something traditional after making so many "fancier" pasta salads. This hit the spot. Like others, I reduced the sugar to 1/4 cup, a little less vinegar, and added 1/3 cup sour cream to make it creamier. You can add whatever vegetables you have on hand. I used 1/2 a yellow onion, 1/2 red pepper, 1/2 green pepper, peas, 3 boiled eggs, and cubed cheese. Really hit the spot for what I was craving!

Baked Honey Mustard Chicken

With the tweaks others have recorded, very yummy. I also marinated the chicken in the sauce. I added 2 cloves of crushed garlic to the sauce. I sprinkled in the amount of paprika that "looked right", rather than a full teaspoon. Used Dijon mustard. Smelled amazing while cooking - could barely wait for it to be done! Served with a brown rice/cashew pilaf, and fresh spinach sauteed in garlic. A wonderful, tasty, 'homey' tasting meal. Will increase the amount of sauce when I make it again!

Sesame Noodle Salad

Really nice, easy, and inexpensive to make! Like others, I reduced the oil to 1/4 cup and added more vegetables - asparagus, red bell peppers, sugar-snap peas. Made with whole grain spaghetti, but will try it again with soba noodles and/or rice noodles.

Yum! Like others, I made the "Absolutely Fabulous Greek House Dressing" from scratch to use with this. I added bell peppers and tomatoes, b/c I'm always looking for ways to get more vegetables and nutrients.

Basic Vegetable Stock

I make this often and freeze portions in ziplock bags. It makes a big difference to use home made stock in soups, sauces, and gravies. If I don't have the green onions, I leave them out. Leeks are a nice addition, to. As is, this is pretty much the perfect standard vegetable stock good cooks and chefs use.

Jeremy's Philly Steak and Cheese Sandwich

Awesome. I used provolone. I know it's not a "Philly" cheese steak without Cheezwhiz (gross, anyway) but delicious! Added green peppers to the onion/mushroom mix.

Bacon Ranch Pasta Salad

Yum! Used whole wheat pasta and added some red bell pepper for extra crunch. I also used real garlic and fresh ground pepper instead of the salts. Added thawed frozen peas, and having made this a couple of times, I like to cube the cheese, as in shredded form, it tends to form clumps in the salad.

Penne Pasta with Cannellini Beans and Escarole

I left out the escarole, b/c where I live it is very hard to find. This was a tasty dish, with the 'fixes' that others have noted. I added 3 cloves of crushed garlic, finely chopped onion (just 1/2 of a small one), regular canned tomatoes, and some Italian spices and pepper. I also used whole grain pasta, b/c that's just what I eat. A good, satisfying, vegetarian meal with a good protein source. It is a quick meal, but I simmered the 'sauce' for awhile b/c I had the time and wanted the flavours to meld a bit. Thanks for posting!

Zippy Shepherd's Pie

Very yummy! Like others, I prefer fresh veg to canned or frozen. I added steamed fresh green beans, and for the ground beef, I put chunks of a mid-quality steak in the food processor. Very nice comfort food!

Baked Pork Chops I

Really good "homey" comfort food kind of recipe. I know people don't like it when they tweak the recipe then review it, but for me, rosemary and pork are a match made in heaven, so I added a 1/2 tsp to the mushroom sauce and it made it smell and taste very nice. Had with brown rice and steamed asparagus. Yum!

Greek Penne and Chicken

I've been making variations of this for a few years, depending what I have on hand. I often add extra veg (red and yellow peppers), sometimes crumbled cooked bacon, sometimes pine nuts. A versatile and yummy recipe.
