Yum! If, like me, you rarely have dried mustard powder in the house, 1 tsp powder converts to 1 Tbsp prepared. Worked wonders.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Excellent. I doubled the meat and all other ingredients except the chili powder, keeping at 1 tbsp. Cooked in oven at 300 F for 1 hour, then glazed the tops. Back in oven at 325 for 10 minutes, flipped them, and then another 10 for that side. Rested them for 5 minutes before carving. The meat was so tender, and the glaze is amazing. Thanks for a recipe I will make again and again!

Artichoke Spinach Lasagna

I know everyone hates it when you adapt a recipe and rate it, but I made the alfredo version, and it rocked. Added also 1 heaping tsp on sundried tomato 'pesto' to it, more black pepper, more garlic, and yum. Also added that ricotta layer. So delicious. Not low-fat, but good for a nice treat once in awhile, and at least no bad fats (I made my own alfredo - not from a jar or can). Also, I indulge in pasta so infrequently, I always put a doulbe layer of the uncooked noodles. Came out perfect, and beyond restaurant quality.

Pumpkin Cake II

So good. I used 2 tsp pumpkin pie spice - only alteration. Topped with cream cheese frosting. Everyone raved. I also raved, and I'm totally a "is it worth the calories?" girl. This is WAY worth the calories.

Thai Chicken Balls

Very delicious - made a few changes. I live in Thailand, so bought a standard herb/spice pack with the onion, ginger, limes (no real "lemons" here in Thailand, just imported - so limes give it more of a real Thai taste), chilies, and lemon grass. Followed the recipe as-is, but grated a bit of the Thai ginger in, added one crushed clove of garlic, and about 1/2 tsp salt. I let the mixture sit over night, with 2 stalks of lemon grass stuck in for the flavour. Pull out the lemon grass before making into meat balls. I also baked, as per other reviews. Delicious. My Thai friends loved them. Served with the left over sweet chili sauce to dip in, as cocktail meatballs.

Easy Baklava

OMG - so good. I followed the advice of other reviews, and upped the honey to 3/4 cup. For my nut mixture, I used 1/3 walnuts, 1/3 pistachios (more Middle Eastern) and 1/3 macadamias (not Middle Eastern at all, but delicious!). I whizzed the nuts in the food processor for about 30 seconds (with the cinnamon) for that fine chopped texture a la restaurant baklava. Followed the recipe as-is in all other regards. Superb. Wasn't even hard, as I always though baklava would be. Thanks so much!

Amazing Chicken

This recipe is very nice as-is and perfect for most meals. I was in a mood for "slow cooking", so I altered it a bit. I pounded the chicken a bit to tenderize, then seasoned with a little salt and pepper. I also made garlic mayo - 2 cloves of garlic, put through the press, some thyme and a bit of pepper. Coated the chicken with that. Seasoned the breadcrumbs myself too, with some salt, pepper, thyme and oregano. OMG. Soooo good. That made it a 5. But even as is, 4 or 4.5

Greek Chicken

Excellent. Made this tonight. Followed the recipe with only a couple of slight modifications: -in the feta mixture (in the food processor), I threw in 1 large clove of garlic). - before covering the chicken, I sprinkled a little salt and pepper on top We enjoyed the recipe immensely. Company-worthy, but not that hard to make.

Pumpkin Bread IV

Really good. I reduced the recipe to 24, which makes 2 loaf pans and makes all the ingredients more "normal"--one can of filling, 3 cups of flour, 1 tsp of most of the other dry ingredients. I added walnuts, and just a touch more of each spice b/c I like that. Delicious.

Seasoned Fan Potatoes

Yum! Very versatile recipe--easy to alter with different spice blends. Here is my trick for making the thin slices in just a few seconds--no muss, no fuss: I place the potato in between 2 wooden spoon handles. I can then cut the slices super-fast, and the kinfe hits the two handles about 1/2 cm from the bottom, preventing it from going all the way through. Literally takes about 3-4 seconds per potato.

Easy Indian Butter Chicken

So, so very good and easy. Much easier than some of the other similar recipes. My husband CRAVES this, and he has always said he doesn't like Indian food. One of our favourite meals ever. I serve it with basmati rice and naan bread (recipe from this site). Excellent.

Michelle's Coconut Chicken Curry

Great base---I made it a 5-star by adding lime juice and a little sugar, and some chillies (I live in Thailand, so I've acquired more of a taste for the lime and spice of a good Thai curry). With the simple additions, this made better curry than I've had in most places in Bangkok!

Souvlaki

Amazingly good. I grew up in a city full of Greek restaurants. When I was craving souvlaki, I found this recipe. O. M. G. I too was skeptical about the soy sauce, but DON'T leave it out. I probably added a bit more lemon, and used a mix of chicken and pork. We all loved it.

To avoid the falling-apart problem, allow the meat mixture to sit in the fridge foar about 20 minutes before forming into patties, then let the patties sit in the fridge for at least 15 min before puttin on the grill. Delicious!
