Roast Sticky Chicken-Rotisserie Style

Reviewed: Nov. 9, 2013
I just made this using the spices EXACTLY as written and it is awesome! I made the chicken in my George Foreman Rotisserie instead of the oven and it is better than the roasted chickens I usually buy at the store. I changed the serving size to 48 so the spices came out in cups and tablespoons and mixed it up to keep in my spice cabinet. I got a deal on chickens this week and bought 4. I plan on using this recipe on the other 3 in the smoker this weekend.

Perfect recipe. I served it with a crushed mint leave in each glass and garnished with lemon slices. It was gone within the hour!

Microwave Popcorn

Reviewed: Feb. 14, 2010
Great idea.....it really will burn after 2 1/2 minutes....took 3 times to figure it out. Changed to 1/4 cup popcorn and didn't have the waste of all the unpopped kernals and no burning. 1/4 cup is perfect amount for one person. Used standard brown lunch bags from grocery store, olive oil, and added butter popcorn seasoning in the bag. After it was popped, sprayed with ICBINB and all 3 of my kids said it was better than regular microwave popcorn. One last tip...fold bag over twice and put a small piece of tape to hold it shut. No problems with bag coming open in the microwave and the tape does not melt.

Light Oat Bread

Reviewed: Feb. 14, 2010
Awesome bread, other reviewers were right, kids don't even see the oatmeal. I subbed 1 cup whole wheat and it was great. Kid's thought it tasted and looked like store bought bread. Great texture, soft and light. Holds together great for sandwiches. One tip.....to cut thin slices use an electric knife!

Potato Chips

Reviewed: Jan. 9, 2010
I tried other suggestions and used parchment paper on top of my microwave's turntable and used spray oil. I used my mandolin's thinnest setting and the chips took 4 minutes to cook. After the first few tries I went ahead and salted the chips on top of spraying oil on them prior to cooking instead of adding salt afterwards. It seemed to work better. Over all 2 out of 3 kids loved them. The other was turned off by the brown color that regular chips don't have to obtain the crispy factor.

Great recipe. I subbed pumpkin pie spice and used buttermilk so I omitted the vinegar and my kids loved them!

Like a few other reviewers i didn't have mace so I substituted cinnamon and nutmeg. Baked it covered in the oven and stirred halfway. Turned out great! All 4 kids LOVED it and they didn't know it had squash in it!! LOL

Slow Cooker Chicken Dressing

This was so good. I had to cook longer than the recipe recommended so I just added a little more broth in the beginning. It turned out perfect.

Delicious Southern Cornbread

Reviewed: Aug. 9, 2008
The taste of this cornbread is great. My entire family loved it. But I question the amounts. I used a 6 x 9 pyrex dish and the finished bread was thin, only 1 1/2" thick. I will double the recipe next time to fill a 9" round cake pan.

Creamy Au Gratin Potatoes

Reviewed: Jun. 16, 2008
I didn't have enough cheddar cheese for the recipe so I used half cheddar and half velveeta. All of my kids loved it! The leftovers I simmered with milk on the stovetop until the potatoes cooked apart. I added chopped bacon and sour cream...topped with more cheese and we had loaded potato soup!

Louisiana Shrimp Creole II

Reviewed: Apr. 5, 2008
I served this at a dinner party to mixed reviews. Friends who love cajun food and have eaten in Louisiana didn't like it, and complained that it was bland. The others who didn't normally eat cajun food loved it. It's a great dish, but not an authentic Louisiana Creole flavor.
