Chicken Makhani (Indian Butter Chicken)

One word: AMAZING!! My first attempt at cooking an Indian dish resulted in disaster, but after gaining some confidence, I decided to try one of my favorite dishes, Makhani Chicken. I followed the recipe exactly except that I forgot to season the chicken just before adding it to the sauce, but I just combined the spices once the chicken was already mixed. I also used heavy cream rather than half and half. (Also, if you can't find ginger-garlic paste, do what I did and get separate tubes of garlic paste and ginger paste, usually found in major grocer's produce section. I actually found mini three-packs with both these pastes in it. Then just combine 1/2 tablespoon of each.) My husband said this was the best indian dish he's ever had....and I agree! I can now proudly say that MY butter chicken is MUCH better than what our favorite Indian restaurant serves. Serve this with Basmati rice. Plain white rice just doesn't cut it!

Best Spanish Rice

I LOVE Spanish Rice, and I've tried several recipes on this site. I, like others, was a little reluctant, afraid it would just taste like salsa, but was pleasantly surprised that it was awesome!! And as icing on the deliciousness is that it takes no time at all and uses very minimal ingredients. The only alteration I made to the original recipe was that I added about a tablespoon of cumin. Great recipe!!!

Bread Pudding II

Oh. My. Word. This is absolutely divine! I am a bread pudding lover, and while I usually only eat it at our local buffet place, I decided to take the plunge and try and make some myself. It was surprisingly simple to make; the prep took no time at all! I did have to make a couple of modifications, because I was out of a few key ingredients. I didn't have eggs, so I substituted with mayonnaise, 3 tablespoons per egg, or 3/4 cup for the entire recipe. I also realized I only had 1 cup of milk left, so I used that and 1 cup of coconut milk. I also added some brown sugar in addition to the white sugar because the coconut milk was unsweetened, and I just love the taste of brown sugar! I used regular, slightly stale, white bread, and let it cook about 7 minutes longer. I am WOWED! It's absolutely delicious, and blows our buffet place out of the water!!

Crunchy Rice Casserole

I don't eat this type of meal, but my husband LOVES this dish, and that's enough for me to give it five stars. I also love it because most of the ingredients are items I usually have on hand, and it really is very easy to make. Great recipe!

Baked Chicken Nuggets

These came out way too salty and herb-ey. The parmesan cheese has plenty of salt, as does the Italian breadcrumbs, so the extra addition of salt is just too much. (I guess I really should have known that.) My husband only ate a couple and then said, "I just don't like them." So we're still looking for a good baked nugget recipe...

Glazed Apple Cream Pie

This pie is insanely amazing. I have never baked a pie before, and yet I have to say, this is the best pie I have ever eaten!!! My husband will not shut up about how delicious it is, and is telling all his friends. The only changes I made were that I doubled the amount of glaze, per other reviews. Do refrigerate this pie to let the cream set, but I honestly loved this pie warmed a bit once it completely cooled. But no matter how you eat it, it is most certainly a slice of heaven!

Cheddar Bay Biscuits

I'm not sure how the recipe would have turned out had I followed the directions exactly, but with a few alterations, they tasted EXACTLY like the RL biscuits (and 15 other people agreed). First of all, the trick to making light and fluffy biscuits is to handle the dough as little as possible. Earlier reviews stated that these biscuits were much more dense than the light RL ones, so remember to mix the dough only as long as necessary. I doubled the recipe, so I added about 1 teaspoon of garlic powder to the baking mix (before the wet ingredients) to give it a garlic punch! I also doubled the amount of cheese. I think the real secret into making these like RL's, is to take them out after baking halfway, brush with the garlic butter mixture, bake the rest of the way, and then brush again with the garlic butter. This keeps the biscuits moist and full of flavor! All in all, I give this recipe four stars, because it did need some alterations, and like most bread recipes, after the biscuits sit out for a bit, the taste just isn't quite right. But serve these fresh out of the oven and you will amaze your guests with that famous seafood restaurant appetizer!

Baked Basil Fries

I'm so glad I found this recipe. I LOVE french fries, and to find an awesome, healthy alternative is a treasure! These are great, and will be a regular side dish in my rotation. I made these with "Homemade Black Bean Burgers", and the combo was outstanding! Thanks for this recipe!

Homemade Black Bean Veggie Burgers

These are delicious! I eat frozen black bean burgers regularly, and these blow them away! I'm going to start making a big batch for my husband and I to eat for lunch! I made these with "Baked Basil Fries" also on this site. What a combo! Thanks for this recipe!! (Try putting the bean mixture in the refrigerator for a few minutes before you make the patties and cook them a little longer. They won't fall apart that way.)

Spicy Mango Salsa

After reading all the rave reviews about this salsa, I decided to try it. I was disappointed. Like others, I thought the ginger was WAY to strong. That's all I tasted!! I probably will not make this again, opting for another recipe. However, my husband did like it. I guess it depends on your particular taste.

Black Bean Salad

I absolutely LOVE LOVE LOVE this recipe!! My husband and I ate it with everything: by itself, with tortilla chips, in a taco. This is absolutely delicious!! It did take quite a time to prepare, and I was praying it was worth it, and IT WAS!! I'll take the time again and again!!!

Vegetable Lo Mein

I made this tonight for my husband and I, and all I can say is WOW!! I LOVED this recipe!! I added twice as much hoisin sauce (because I love it) as well as water chesnuts. I like it better than any chinese place I've been to!! This one is definitely a keeper!!
