Sausage Egg Casserole

Reviewed: Dec. 28, 2002
This egg casserole is absolutely delicious and easy to prepare. I have made it twice. The taste reminds me of a light and fluffy souffle. I omitted the peppers, because my family does not like spicy food. Both times I prepared it I halved the recipe, and it still comes out beautifully. The second time was for company so even though it was a half recipe, I still used 3/4 lb sausage and the full amount of green onions - for maximum flavor. I did use 6 eggs - in the "half" recipe while using the full amount of green onion and sausage.

Smothered Bacon Chicken

Reviewed: Jan. 18, 2001
I enjoyed this recipe. I did rub brown sugar and pepper the bacon, as the other reviewer suggested, and it made all the difference. The only thing I would do differently, is maybe fry the bacon until most of the fat is rendered, but not before it becomes crisp (let it cool, then rub brown sugar and pepper it). I would also broil the chicken at the end for a few minutes so the bacon taste would come out more.

Taco Pizza

Reviewed: Feb. 25, 2003
A great recipe that is simple, inexpensive, and very tasty. I don't have a bread maching so I used a store bought pizza crust (Boboli brand). I also didn't notice that the recipe was for 2 pizzas until I started cooking. I made 1 pizza using the full 1/2 lb of ground beef, and mixed the other ingredients as stated in the recipe. While assembling the pizza I used what looked right to me - not necessarily half of everything.

Chicken Fried Chicken

This recipe is the best! It is very flavorful and has a great crunchy taste without being greasy. I used Ritz crackers instead of Saltines, and used extra light olive oil instead of just 1 tbsp.

Cheddar and Bacon Log

Reviewed: Dec. 28, 2002
This was very popular amongst my guests. At first I was kind of nervous that forming the logs and rolling in the pecans would be difficult and messy, but it was actually extremely easy! It makes plenty.

Skillet Chops with Mushroom Gravy

Reviewed: Dec. 4, 2002
This is much better than the cream of mushroom/pork chop recipe I had been using for years. The use of milk instead of water, and the addition of breading the pork chops makes a great dish. I also used 1 cup of milk instead of 1/2 cup.

Easy Chocolate Chip Pound Cake

Reviewed: Feb. 25, 2001
Super Moist Cake! I used vanilla pudding when I prepared it. I also think that I will use mini chocolate chips the next time I make it, because the larger ones mostly settled to the bottom. I think that these would make excellent muffins/cupcakes.

Mou Shu Chicken Wraps

I bought the Plum Sauce already made in a jar - which saved lots of time. The only thing I would change would be to use more of the coleslaw mix.
