I am a very happy newlywed and my husband likes to joke that he married me for my cooking - or at least that that sealed the deal. I love to cook and to bake. When I make something new that comes out great it's like creating art that everyone loves! I'm still adjusting to my new role as an "Army Wife" but I feel that my life is very blessed and I am very lucky to have such a brave and loving husband. We are also the proud parents of a fiesty Australian Cattle Dog named Dusti and I even enjoy making her homemade treats.
My favorite things to cook
Mexican dishes - particularly Enchiladas! Chicken Adobo, Salmon Patties, Roast and Pork Chops are a staple in my house.
My favorite family cooking traditions
Every year growing up my family made tamales at Christmas time. We always made so many that we'd have a freezer full all year round!
My cooking triumphs
The best dish I ever made was something I made up as I went with chicken, herbs, spices, and rice. Simple but flawless... my fiance raved that he would have paid a pretty penny for such a feast in a restaurant.
My cooking tragedies
One time when I had to make dinner for guests on last minute notice and was rushing I undercooked the fried chicken which turned out hot pink!

Shepherd's Pie
This is a good base recipe, but like so many others I made a few changes to suit our tastes. I seasoned the ground beef as it was cooking with rosemary & thyme. I also used fresh baby carrots, a small onion, chopped celery and some mushrooms rather than canned veg (yuck). I mashed the potatoes with a little butter and milk and left out the butter on top. I baked for 25 min. then added shredded cheddar and baked until bubbly (about 5 min.). This was really good with my changes. My hubby and my daughter both liked it so we will have it again.

Roast Beef and Gravy
Amazingly simple and delicious. I was skeptical of not searing the meat first but it came out perfect just the way the recipe says. I did cook it on high for 4 hours then low for a bit after that until we were ready to eat and it was fine. Great recipe! Thanks!
