Whit's Chicken Enchiladas

This is the recipe I have been looking for. We prefer corn tortillas, but I made it both ways, and there were no complaints either way. I also added green salsa (used a jar version)over the enchiladas, after the cream, b/c my husband likes green chili chicken enchiladas. If using corn tortillas, be sure they are completely covered with the cream, or they will be hard and crunchy. Absolutley Wonderful and easy. Shred your chicken with a fork..it's better that way.

Roast Sticky Chicken-Rotisserie Style

Easy, good & inexpensive. We only need one, but I cook 2, and use the extra chicken for "Whit's Chicken Enchiladas" or for chicken salad. Husband & kids love it.

Bacon and Date Appetizer

Great. I had these at a party and the hostess would not tell us the ingredients until we tried them. (I do not like dates, nuts or bacon) but this dish was really, really good. It has changed my opinion about how I view foods.

Frogmore Stew

Easy and good. Especially for last minute company, since it takes minutes to prepare, and you can't mess it up. Old Bay is found near the seafood counter at most grocery stores. French bread and drinks, and you have a meal.

Rempel Family Meatloaf

I make this "almost" as is, but will change things depending on the ingredients on hand...for example, it calls for 1.5 pounds of meat...I happened to have 1 lb. beef and 1 lb pork (2 lbs. total), so I mixed them...delicious. Another time I had saltines and used them in place of butter crackers. Delicious. It's a basic ratio recipe, and the family (including very picky kids) eat it and go back for seconds, and their friends eat it and approve. My daughter (16) said "why does everyone complain about meatloaf? It's delcious!" I think it's because many people put in onions, bell pepper, etc. and kids just don't like crunchy mystery chunks in their food. They will when they get older...but for now, this meal is good and much better than eating something from a fast food joint. Mine will eat green beans as a side to it. Anyway, I've made this several times, with slight variations to the amounts, etc...but it comes out great each time. There are lots of good meatloaf recipes, but this is simple and gets approval from everyone, so it is now my go to recipe.

Potato Casserole II

A good recipe to take to a covered dish as it is "different" but "basic." It's not an "outstanding, just love it type-of-dish" but it was completely eaten at my family reunion, so it is a good one to use. I hope that makes sense!

Awesome and Easy Creamy Corn Casserole

Easy to make, and was good. Not a favorite of mine, but it was good for a change from standard side dishes. WOuld be nice for a covered dish type of meal.
