Asian Coconut Rice

Cathy's Version of Brooklyn Diner Coconut Cake

This cake is wonderful. I'm surprised it doesn't have more reviews. Very easy to make and turns out very moist and delicious. I used 2 tsp. of vanilla, no almond extract, and added a cup of sweetened coconut flakes to the batter. Also, I used three 8" pans which made a taller cake. Frosted it with the buttercream frosting from this site and sprinkled more coconut on top. It looked magnificent, very impressive. No one would ever guess how easy it was to make. I'll definitely be making this again.

Zucchini Provencal

Very quick and easy to make. Sprinkled a little Italian seasoning because I didn't have fresh parsley. Lots of flavor. Tossed with pasta for a delicious dinner. Will definitely be making this over and over again.

Favorite Old Fashioned Gingerbread

This turned out wonderfully moist and absolutely delicious! I doubled the spices and it turned out with a deep dark rich flavor. I used a 9" springform pan and ended up with a nice tall cake. It was done perfectly in about 45 minutes. I will definitely be making this again.

Orzo with Parmesan and Basil

This was a quick and easy recipe. I added chopped cooked chicken and chopped sun-dried tomatoes and served it as a main dish for two. This will definitely be one of my new go-to recipes.

Banana Cake VI

This cake was unbelievably moist and delicious. Very easy to make. I used lemon juice in milk as a substitute for the buttermilk. Used a canned frosting because I was in a hurry. Cooled the cake in the refrigerator because my freezer was too full to fit. Will definitely be making this again soon.

New Duchess Spice Cake with Maple Buttercream Frosting

I made this cake for my mom's birthday and it turned out wonderfully moist and delicious. I sifted the flour before measuring and then sifted the dry ingredients together. I followed the suggestion to use all butter. The frosting was the perfect amount to frost an 8" layer cake. Would definitely make this again.

Caramel Cake I

I baked this cake for my sister's birthday. With a few modifications as mentioned in previous reviews, it turned out moist and delicious. To prevent sticking, I greased AND floured the cake pans. I used 1-1/2 recipes or 36 servings and made three 8" layers, baking for 22 minutes. The caramel icing never quite got thick enough, even after cooling in the refrigerator for an hour, so I added some powdered sugar and it turned out perfect. Very delicious and would definitely make this again.

Chocolate Apple Bread

This bread turned out delicious! I love the cinnamon sugar topping which turned into a nice delicate sugary crust. I didn't have buttermilk, so substituted milk with a little lemon juice which worked out well. I used 2/3 C. each of the walnuts and chocolate chips. Yum! Will definitely be making again soon.

Fajita Marinade I

Used to marinate chicken for fajitas and it was delicious! Omitted the water and zested some of the lime peel. Marinated for about 3 hours. The liquid smoke really enhanced the flavor.

Chocolate Yummies

These turned out exactly as pictured. A definite hit on our family campout this weekend. I followed some of the other suggestions listed. I used a metal 13 x 9 pan, lined the pan with foil and used a butter spray for easy removal. I broke each graham cracker in half. I put the pan in the oven for a few minutes to melt the marshmallows. Because they were for a campout and wanting them to be more like s'mores, I omitted the peanutbutter as some of the others did. After cooling the chocolate topping, I lifted out the foil and inverted them onto a cutting board and cut with a chef's knife between each graham cracker and then cut each one in half. Definitely satisfies the chocolate craving. Yum!

Carolyn's Orange Rolls

These were a hit at our Mother's Day brunch. Very light and fluffy with a wonderful orange flavor. I did find the dough to be sticky and added about another 1/2 cup of flour, but by the next morning I had no trouble rolling it out. I made the filling the night before and also a batch of the orange cream cheese frosting from this website and let those meld in the refrigerator overnight. I microwaved the filling briefly to soften it up to a spreadable consistency. The frosting was spreadable by the time the rolls had finished baking. This is definitely a keeper recipe. I can't wait to make them again!

Anna's Chocolate Chip Cookies

Great recipe! I used margarine, added an extra 1/2 cup of flour and 1 tsp of baking powder and they came out nice and thick and deliciously chewy. Baked for 10 mins. at 350. Yum!!

Blueberry Cream Cheese Pound Cake I

Wonderfully moist cake. I left out the sugar as some of the others did. Definitely was sweet enough without it. I tossed the blueberries with some of the dry cake mix before adding them, but actually the batter was so thick I'm not sure that was necessary. I used a little cinnamon sugar in the bottom of the pan as mentioned in another review before adding the batter and didn't have any problem with the cake sticking. It easily fell out of the pan after cooling for 10 minutes. I alternated layers of batter and blueberries as I filled the pan rather than folding them into the batter. Made a glaze of 1 cup powdered sugar, 1 tsp. vanilla and enough lemon juice to make a glaze consistency. Turned out beautifully. A definite keeper.

Fish Roll-Ups

I made this recipe using what I had on hand, tilapia and shrimp. Rather than rolling it up, I put the filling on top with the shredded parmesan over it. Very quick and easy. Delicious! Definitely a family keeper.

Autumn Harvest Cookies

I've made these cookies several times now. A definite keeper. I don't have orange extract, so I used a fresh orange and squeezed a teaspoon of juice and a teaspoon of grated zest. Gives them a nice subtle orange flavor. I also used a full cup of walnuts. I went with the suggestion to use baking soda rather than powder and they came out deliciously soft and chewy. One time I drizzled them with melted white chocolate and the next time with a powdered sugar/orange juice/cinnamon glaze. Fabulous either way.

These cookies are delicious! What worked for me was to chill the dough and then roll it out and cut with a 3" cookie cutter. I made Christmas trees for the holidays. I found they only needed to bake for about 8 minutes. The recipe made 4 dozen. I cut the glaze recipe down to a third and it was just the right amount. I added lemon zest to the glaze. These cookies look and taste very impressive, just like a bakery cookie.

Crispy Orange Beef

What a great recipe! This was delicious. The beef was crispy and the orange sauce was to die for. I used garlic/ginger flavored wok oil rather than adding fresh garlic and ginger. I didn't have any orange juice concentrate, so I used a fresh squeezed orange and a little more zest than it called for. It turned out fabulous. A definite hit!
