Turkey and Quinoa Meatloaf

I made the recipe as stated. The texture was great with the quinoa, and baking it on sheet allowed the fat to run off. It had a unique flavor, but really broke down into a basic pepper, sweet and spicy flavor. Black pepper was the prominent feature, along with sweet/salt from the Worcestershire and brown sugar. Had to think to taste the hot pepper sauce and onions. To cook the quinoa for texture wasn't worth the time. We won't make this again.

Baked Shrimp with Feta and Tomato

Lots of flavor! Unless your taste buds are dull you will only need a regular serving to get your fill of this dish. This is a special treat and not something I'd make often since their is so much flavor. But it is so good that I may not be able to pass it up for the next special dinner. It's a wonderful departure from the typical shrimp and noodles or scampi dishes out there. Next time I may try it bruschetta-style.

Coconut Macaroons III

Yummy! Dense and chewy on the inside, and toasted just enough on the outside. I also used 1tsp vanilla and 1tsp of almond extract. It was slightly too sweet so maybe I will cut back on the scm next time. I used sweetened coconut, which was fine, but the sweetness was from the scm.

Great Grandad's Sugar Cookies

Very similar to my mom's recipe, but with nutmeg that gives these the needed holiday flavor. Don't know what the leavening did for the recipe. They were a hit with the coworkers and my kid.

Pecan Rice

I make this quite often, with or without pecans. If I do use pecans I will keep them chopped fairly large and not ground or minced as it tends to make the rice more pasty.

Apple Crunch Pie II

I use Empire apples since they lean slightly more tart than sweet. They made a great pie. And, without a second crust or lattice, this pie is "healthier" than others and makes a very good and different pie. Everyone loves it. Also, try it with the "Healthier Pie Crust" which has coconut - you'll be pleasanty surprised (but lessen the sugar somewhere).

Healthier Pie Crust

I didn't tell my fiends, who don't like coconut, about the crust ingredients, but they liked it anyway. Though, I agree that it was a bit sweet using the sweetened coconut. So, next time I will try 1/2 sweetened and 1/2 regular. The crust went well with the Apple Crunch Pie II recipe.

Navy Bean Soup I

It's a hearty soup, but a little too heavy on flavor (maybe just the salt?). I used pre-cooked, pre-cubed ham and they turned into flavorless chunks. I would rather use a ham bone or salt pork and skip the extra salt. I would definitely make again with a few tweaks.

My Amish Friend's Caramel Corn

Nothing but compliments when I make this! I use air-popped popcorn and add 2 cups whole almonds for better health and extra crunch and flavor. When I used margarine, it came out a little chewy, but very tasty. I also used half butter and half margarine and that made it more crunchy and slightly buttery. I loved it both ways.
