Mac and Cheese II

Reviewed: Feb. 17, 2007
I change a couple of things. Instead of the 8oz. of processed cheese I used 8oz. of cream of chicken. I also used a small onion minced and add teaspoon of black pepper and garlic powder you can do it to your taste. I also used shells pasta, my sons request. You can use 10.5oz can of cream of chicken to make it more creamy. This was a great starter recipe. I am going to make it again. My family loved it. You could add a pinch of cayenne pepper if you want a little zing.

Sesame Chicken Pasta Salad

Reviewed: Sep. 10, 2007
This was great for me and my husband but not for the BBQ we brought it to. It was not a hit. I used a different pasta that had a mix spinach of and regular. They liked the pasta but did not like the spinach. Next time I would omit the spinach, it wilts and does not keep well. That is what others said they would do. I thought the same thing.

Homemade Mac and Cheese

Reviewed: Sep. 10, 2007
I thought this recipe was O.K. Kinda a starter recipe. I used taco shredded cheese no parm. cheese 2 cups of milk, a can of cream of chicken and a medium to small onion. I did not add the bread crumbs. I sprinkled the paprika over the top and some extra shredded taco cheese. Made it for my sons picky autistic child's 9th birthday and it was all gone. His cousin, that never eats onions didn't even know it had onions till I told her and she still went back for more.

Lemon Chicken II

Reviewed: Apr. 18, 2007
What a excellent recipe! My Autistic son, who is a picky eater loved it and wanted me to make it the more. The only thing I would do different is cut the pieces before instead of after the are cooked. I added a little bit more cornstarch to the sauce to make it a little thicker per my taste. I am going to make it again in a couple of days. This is now in my top ten! I am going to recommend this recipe to family and friends!

Italian Pasta Salad

Reviewed: Mar. 25, 2008
This was excellent! I did not use a red pepper, because I am not a big pepper fan. But in it's place I used little baby carrots. I also used tri-color rotini pasta. You could also use tri-color tortellini. This is a big family favorite and party favorite. I highly recommend this recipe.

Chicken Marsala

This was O.K. It was to thin of a sauce. NO salt. It needed something. The wine was very strong even cooking it off. Fresh oregano is always better. Did not care for this recipe. I have had better.

Southwestern Pasta Salad

Reviewed: Sep. 10, 2007
I thought it was great would make it again, husband thought it was great. It is a different spin in pasta salad. I used beef stake tomato instead of plum. Would recommend, but when serving at a party think of the people you are serving it to, if they do not like to try different things do not make. You will have left overs. If you like to try different things this is the refreshing way to go a great summer dish.
