Pineapple Zucchini Muffins

Reviewed: Jun. 27, 2005
I changed this recipe a lot but it turned out really well. I only did a half batch and cut the oil to 1/2 cup and also cut down the sugar a bit. I substituted half of the flour for whole-wheat and used carrot instead of zucchini. I forgot to cut the pineapple in half so added the entire can with the juice. I found the muffins to be a bit too sweet but everyone in my house loved them!

Mushroom Lentil Barley Stew

Reviewed: Dec. 6, 2010
This is a perfect vegetarian stew! I have made it a couple times now and am happy with it exactly as written. You can also vary it a bit, use different spices, I cut down the broth by half and just add water for the rest as I don't like it too salty. I also never have onion flakes in the house so I just use an onion, all in all this is one of my favorite slow cooker recipes!

Easy Tortellini Soup

Reviewed: Feb. 8, 2009
I have never enjoyed a new recipe this much before, I was so surprised I actually made involuntary yummy noises! I did make a couple substitutions: instead of sugar and hot sauce I added about 1/3 cup ketchup and chili pepper flakes, I also didn't have wine in the house so skipped that. I did add the corn but will probably go with garbanzo beans next time to cut down the sweetness. I forgot to add the parmesan, probably because it tasted so good I didn't think it needed anything else. I'm already excited for leftovers for lunch tomorrow!

Cherry Angel Food Cake

Reviewed: Nov. 24, 2008
My first attempt at angel food cake, I used all-pupose flour so that was probably the problem but it didn't even attempt to raise a little bit. My friends didn't know that it was supposed to be twice as high though and all raved about it, very tasty and I'm excited to try it again!

Snowballs

Reviewed: Feb. 17, 2011
I have made these a couple times referencing the other similar recipes on the site as well and to turn this into a 5 star recipe I just changed the sugar to 1 cup confectioners sugar, I find it makes for a more delicate treat. I also roll them in the confectioners sugar both while hot and again 15 minutes later while cool. I sometimes use walnuts or almonds instead of pecans, just depends on what I have around.

Chunky Peanut Butter Cookies

Reviewed: Mar. 28, 2010
Amazing!! You can do anything with this recipe and it never fails. I have used different types of nuts, dried fruit, coconut, less of some, more of others... personally I find the amount of sugar to be too high but I never like overly sweet things. I make substitutions based on what I have in the house, I have made this 100% as written as well and it deserves the 5 starts.

Mountain Cookies II

Reviewed: Dec. 10, 2009
Very rich, very tasty and rather finicky to make but completely worth it for the annual Christmas baking. A tip - be sure to make the butter cookies small, if you don't get 4 dozen they're too big and will end up being too sweet. As small bite sized treats though they are perfection!

Surprise Cake

Reviewed: Mar. 31, 2009
This cake is fantastic! It was so simple to make, turned out great the first time around and the flavour was wonderful. I will probably play with the frosting recipe a bit as I found it to be too sweet but my friends loved it.

Speedy Oven Fudge

Reviewed: Dec. 29, 2010
Amazing! I was short on time this Christmas and didn't get around to all my usual baking so made this fudge to gift to my friends and it was such a hit. The chocolate one had the best consistency and classic fudge tasty, I also did a maple walnut and vanilla cashew (which was my favorite). They turned out softer with the lack of cocoa and could probably benefit from some customizing but all in all this was some of the best fudge I've ever had and it really is that easy! UPDATE - after making this many times my review still stays at 5 stars. I threw it together in no time the other day, added a swirl of melted caramel and sprinkled it with sea salt and it was an amazing treat to share. Other variations: eggnog (in place of milk) + rum extract and fresh ground nutmeg; mint chips swirled through the fudge; peanut butter; really just get creative!

Chocolate Cake Surprise

Reviewed: Feb. 10, 2009
To me this is a 4 star recipe only if the cake is warm when served - if you don't heat it up I find the cake too dry and the cream cheese topping doesn't really mix in at all. I was also hoping for a richer more chocolaty cake. I might just try some of the other similar recipes on this site or experiment a bit with my own cake recipes. I am going to have to resist adding that cream cheese topping to everything though - absolutely love that in place of frosting!

Super Hot Cereal Mix

Reviewed: Feb. 3, 2009
I am rating this recipe quite low because it is so bland and without a lot of additions I would not have eaten it (I tried). Here is what I did to bring it up to a 4 or maybe even 5 star recipe in my book: added 1/2 cup wheat germ, 1/2 cup dried apple bits, 2 additional tablespoons of brown sugar, 1 teaspoon salt, 2 teaspoons cinnamon, and substituted dried cranberries for the raisins (personal preference for that one). Basically it is a compilation of all the other suggestions already posted - thanks everyone! If you do tend to add sugar, honey or maple syrup to your cereal the extra sugar probably isn't necessary.

Sour Cream Rhubarb Pie

Reviewed: Jul. 2, 2011
This recipe was easy to make and got rave reviews at a potluck I was just at. Personally I don't need so much going on with a pie but it really was pretty tasty! I used the No Roll Pie Crust I recipe from this site and it all come together so fast.

Carrot Cake III

Reviewed: Jun. 1, 2009
This cake needs more spice and flavour for me. The icing was also too sweet. Next time I will try it with some of the recommendations in the reviews. Update: recommendations pay off! Please stop 5 starring recipes that you have to change so much though!!

Lemon Cloud Pie II

Reviewed: Jun. 15, 2008
I'm not sure what I did wrong but this recipe barely worked out for me at all. The meringue crust was way too much for one pie shell but because I had never made anything like it before wasn't sure so just went with it. To me 8 servings for a pie means it is one pie, this recipe easily made enough for 2. The filling was good, I tasted as I went so added a bit less sugar and a bit more lemon, and it was perfect, I'll definitely be making that part of it again. But then I folded in the whipped cream and it never set. In the end I had a lemon pudding in a store bought crust for my family for dessert - not exactly what I was looking for.

Moroccan Lentil Soup

Reviewed: May 28, 2008
Great soup! I don't use canned beans (I cook up raw ones before hand) so definitely had to add the suggested salt. Other then that this soup is pretty much perfect for a healthy, filling and tasty meal!

No Bake Cheesecake II

Reviewed: Nov. 6, 2007
I just made this for a friend's birthday and although it was a bit too sweet for me everyone else loved it (I'll cut the sugar in half next time). I made a couple changes: instead of the pie filling I folded in 1 cup blueberries, made my own crust (1 1/2 cup graham wafer crumbs, 1/3 cup melted better), used a square 8x8 deep glass pan. The berries I used were frozen, I partially defrosted them and even with the extra liquid the cake still firmed up quite well with a fun purple swirl throughout. Super easy and tasty, will definitely make again!

Deep Dark Old Recipe Bran Muffins

Reviewed: May 1, 2012
Not quite enough flavor yet but with some simple adjustments I'm pretty sure this can be a 5 star recipe (less salt, more fruit - apples seem like a good idea, some whole wheat flour). Worth playing with as the bran and molasses combo are exactly what I've been looking for.
