Apricot Cream Cheese Thumbprints
I have no idea why anyone would say these are bland, they have fantastic flavour. I have substituted the lemon for 1 tbsp vanilla and will change up the toppings. A spicy cherry jelly is fantastic, I also used guava paste which is sturdy enough it doesn't run off the cookie at all. I also like to try rolling the dough in different things before indenting and adding the jelly - so far crushed walnuts are the tastiest, sesame seeds look fantastic and powdered sugar adds delicacy and sweetness, I'm sure there are a lot of other things that would work too. My only issue is I actually find the dough to be too sweet, next time I will experiment with cutting down the amount of sugar and possibly adding more cream cheese if I want to work with a pepper or spicy jelly. Note - prep time seems incorrect for this recipe, rolling the dough and adding the jelly takes longer for me. Also I didn't make 7 dozen, I must have made my cookies larger but I ended up with 4 dozen.

Orange Drop Cookies I
This is a perfect cookie. I made them once, followed the recipe exactly except I always bake with real butter rather than shortening, and they are fantastic. The cookie is light and delicate in flavour, holds together nicely and can be eaten with or without the icing.

Mom's Prize Winning Raw Apple Cake
I made a couple of modifications to try to make this a healthier cake but I never thought to cut down on the sugar until it was too late. This cake is way too sweet for me, next time I will cut out the white sugar completely and it will be a nice breakfast/spice cake. The modifications that I made this time around were to substitute whole wheat flour for half of it and I used applesauce instead of the oil, I also added extra spices such as nutmeg, cloves and a bit of allspice. I grabbed the wrong pan and greased an 8x8 so I just used 3/4 of the batter in the pan and the rest as muffins, they took about 25 minutes to bake and did rise nicely.
