Shrimp Spread II

Delicious! I halved the recipe, made it with a foil pack of shrimp, and used fresh ground pepper instead of lemon pepper. Fantastic - everyone raved about it. Next time I would add the tiniest splash of Worcestershire sauce.

Three Cheese Baked Pasta

Mom's Zucchini Bread

I was disappointed in the recipe. I've made a number of zucchini breads but this one was cakey and just a touch dry. Usually zucchini breads are very moist, so much so that they have to be sliced on the thick side to hold their shape. This bread was not crumbly, and held it's shape well, but I found it to be bland and not moist enough. To be fair, I shredded and drained the zucchini very well - the recipe may have counted on zucchini that was not well drained. I could have increased the zucchini to three cups, it seemed light on the zucchini flavor. I also cut the sugar to 2 cups, that could have been reduced to 1 3/4 cups. I'd try it again - it did have a nice spicy flavor - and it baked up nicely. Next time I wouldn't drain my zucchini as thoroughly, just pat it dry and squeeze out available juice rather than let it sit for a bit to drain.

Chicken Marsala

Chicken was delicious but the sauce didn't thicken and there was too much butter & oil. Next time I would cut the butter and oil in half, and after the chicken is cooked, set it aside and reduce the sauce, add a touch of cream to finish it.

Mediterranean Lentil Salad

Very yummy recipe. I make it with 16 oz of lentils, triple the other ingredients, and I add about 3T cumin, 1T curry to the lentils as they cook. I find the lentils take about 35-40 min to cook. It is a fabulous recipe to make in advance, and lasts quite a while. One of my family's favorites - thanks!

Broiled Tilapia Parmesan

This was a big hit with my husband and my 15 mo old. I made a few minor modifications - less butter, less mayo, garlic salt instead of celery salt, and dried minced onions instead of onion powder. I also topped each filet with a slice of tomato. It was a little hard to spread the butter on the fish but I found if I let it sit on the warm fish for a minute, then it was easier to spread. Very yummy, an absolute winner! Great served on brown rice.
