Beef and Biscuit

Reviewed: Apr. 29, 2008
It was decent. I didn't have any green chilis or sour cream, so I used a small 8 oz can of salsa verde for the spicy kick and I melted in some cream cheese in place of the sour cream. It turned out well. I also added a can of corn for a little something extra. I ended up not putting biscuits on the bottom, I can only imagine an undercooked soggy mess, so I prebaked them half way and then put them on top. It turned out to be quite a comforting meal and was even better the next day.

World's Best Lasagna

Reviewed: Apr. 10, 2008
This was excellent. Just like you get in a little italian restaurant. I made a few variations though as I only had two hours to make it. I used only italian sausage and I added oregano to the sauce. I didn't use mozzarella cheese slices, just the shredded kind. I also mixed all the sauce ingredients together, brought it to a boil and then simmered it for 15 minutes. It was delicious using this quick version. I will for sure do it the long way next time and possibly even refridgerate it overnight like other reviews suggested before baking it off.

Best Chocolate Chip Cookies

Reviewed: Apr. 10, 2008
These were more cake like than crispy with chewy centers. It could be that I used margarine, but other recent reviews complained about the same thing. The cookies didn't spread at all either. I will try again using the required butter, but I still don't think this will be the best cookie ever.

Authentic Mexican Breakfast Tacos

Reviewed: Mar. 24, 2008
This was good, but very messy. Perhaps I will actually fry the tortillas next time until they are crisp before I top them with the ingredients.

Lemon Lover's Pound Cake

Reviewed: Mar. 24, 2008
This pound cake was delicious. Very lemony and dense, but light and summery at the same time. I made it for easter dinner and will definitely be adding it to my book of recipes to keep.

Swedish Nut Bars

Reviewed: Mar. 17, 2008
It wasn't bad, but it was alot chewier than I expected it to be. I ground the almonds in a food processor until they were like the consistency of flour, but when the finished product came out I felt like I was chewing on almonds when I ate it. I received several requests at work for the recipe, so I think it deserves three stars.

Bacon Quiche Tarts

Reviewed: Mar. 10, 2008
These were good. I didn't have any biscuits so I used the phyllo dough I had leftover. I cut it into squares and layered it sheet by sheet, covering each later with butter until each muffin cup was filled and I had a cup shape. I put the bacon in the bottom and poured the egg mixture over top. Baked for the same amount of time. Very good. Will definitely try using the biscuits next time.

Macaroni and Cheese V

Reviewed: Jan. 24, 2008
This is exactly how my sister and I grew up with my mom's mac and cheese. I added extra cheese and milk so that it was very creamy and cheesy. Perfect!! And yes, it is a bit grainy. ALL homemade mac and cheese, made with REAL cheese will come out slightly grainy in the end. If you want the smooth kind, then quit making REAL mac and cheese, go buy some velveeta and be happy with your processed version.

Starkey's Mashed Potato Pizza

Reviewed: Jan. 22, 2008
This is a great recipe. I use to get something similar at a nearby pizza place when I was in college. I add green onions to mine for extra zing.

Cranberry Cheese Bars

Reviewed: Jan. 22, 2008
These are amazing. The only thing I changed is I made homemade cranberry sauce the night before and chilled it overnight. I added the cornstarch and brown sugar just before layering it ontop of the cream cheese layer. Awesome . . .absolutely awesome!

Pizzelles I

Reviewed: Jan. 17, 2008
This is a cookie that you either love or hate (depending on how you feel about the licorice flavor). I grew up with these as both my mother and grandmother make them every holiday season and they are hands down my favorite cookie. Definitely use the anise oil though instead of the extract (use half the amt called for), it gives much more of a true flavor.

Ratatouille

Reviewed: Jan. 8, 2008
It is good, but it is not a meal, it is a side dish. I made it as a meal, thinking it would be alot heartier all baked together and was disappointed when it ended up being a pile of cooked veggies and cheese on my plate. Will definitely make it again and again, but along side chicken, beef or fish.

Grandma's Corn Pudding

Reviewed: Dec. 28, 2007
I gave this three stars because the recipe should state that it needs to be made in a FLAT 2 quart casserole. The first time I made it, I used a flat casserole and it turned out perfect. My mom made it for christmas dinner this past week, but used a bowl type casserole and baked it for the full amount of time and it was very very runny. It looked like it was cooked through until we served it. Very disappointing the second time, but I will continue making it using my flat dish.

Chili I

Reviewed: Nov. 27, 2007
OMG . . if you are looking for a chili recipe that doesn't take all day to cook, this is the one! It is fabulous. The only things I change is I add 2 cans of kidney beans and one can of black beans and only half a jalapeno.

Monkey Bread I

Reviewed: Nov. 27, 2007
I follwed the directions exactly and cooked it for the time stated, but when I flipped the pan over all the liquid came pouring out and the entire thing was raw!! I flipped it back into the pan and cooked it for another 30 minutes, but the very center was still raw when I cut into it. It didn't taste anything like the monkey bread I've had in the past. I will try a different recipe.

Perfect Turkey

Reviewed: Nov. 14, 2007
I bought a small turkey to try this recipe because I didn't want to serve something that wasn't perfect on Thanksgiving day and boy am I glad I did!! Yes this turkey was moist, but the flavor and moistness was exactly the same as when you use a turkey oven bag. And I COULDN'T stuff it with this recipe. I'm sticking with what works.

Homesteader Cornbread

Reviewed: Nov. 12, 2007
This turned out really dry for me. I followed the recipe exactly with the exception of adding some cheddar cheese. It took about 45 minutes to bake (the center was still soupy at 30 minutes) and the edges ended up too brown due to the extra baking time I had to add. I'm going to stick to my last cornbread recipe.
