Perfect Berry Shortcakes

This was good shortcake, but I didn't like the "quick" method of preparing it. I think it is so much easier to combine flour and butter by using a pastry blender. My arm felt like it was going to fall off by the time I finished grating the stick of butter into the flour. It is NOT EASY to hold the grater over the bowl while trying to press hard enough for the frozen butter to shave off. Not to mention that the butter got very soft quickly after grating and I lost a good portion of the grated butter because it was stuck inside of my grater. So I do not believe my recipe even had 1/2 cup of the required butter. I will be keeping this recipe, but I have no problem waiting for my butter to soften and then cutting it into the flour with a pastry cutter or fork like any other pastry recipe.

Luck o' the Irish Brownie

OH MY! These were so much better than I ever thought they could be. They are the right combination of chocolate and mint and chewy and gooey. This is my new favorite brownie and will be going in my permanent recipe book. I followed the recipe exactly except that I used margarine instead of butter because I didn't have any.

Tiramisu Layer Cake

I made this for my mother in law's birthday and it was the biggest hit out of any of my cakes. This is definitely my new special occasion cake. It is the perfect combo of cake and tiramisu flavors and I like how it is much lighter than a traditional tiramisu.

Best Tuna Casserole

My husband wanted a tuna casserole like his mother used to make so he found this recipe and made it for me. I was shocked at how good it was. The only tuna casserole I've ever had was fishy and icky tasting. This one was creamy and delicious. He did add a couple of tablespoons of miracle whip for extra zing and used french fried onions instead of potato chips because that is what his mother always did. We will definitely be making this one of our go to quick recipes.

Roast Chicken with Rosemary

This is a great basic recipe, however, I did have to add a few things to make it sunday dinner perfect. I added baby carrots, parsnips, red potatoes and onions to the bottom of the pan and put butter, rosemary and thyme under the skin. I poured a can of chicken stock over the chicken and then rubbed it with olive oil, salt and pepper. I also sprinkled some dry rosemary over the top before baking. It came out perfectly moist and delicious. It is also super easy with adding the vegetables to the bottom . . .you work is done once you put it in the oven!

Cranberry-Orange Spiced Oatmeal

Pepperoni Bread

This is sooo good and easy to make. I use premade pizza dough from my local grocery store and then follow the recipe exactly. It even tastes great warmed up the next day.

Special Buttercream Frosting

This is the best buttercream I think I've ever had. I did substitute half butter, half shortening, but other than that I followed the recipe exactly. 8 cups of powdered sugar seems like it would make the icing sickly sweet, but once you add in the whipping cream and get it whipped up nice and stiff, the icing balances really well with the sweetness of the cake. I used it to ice cupcakes for work and it iced 30 cupcakes and I still have enough leftover for at least 10 more. This will be going in my family recipes book.

Blueberry Sour Cream Coffee Cake

This cake is delicious. I had so many blueberries that I made two different coffee cakes from this site. This one and the blueberry buckle. This cake WON! It is so moist and flavorful and has a wonderful crunch from the nuts. My coworkers finished it off within minutes. It is also a real stunner. The bunt pan just gives it an elegant look and with powdered sugar sprinkled on top, this cake is ready to be admired and devoured!!

French Bread

This was my first time making a homemade bread with yeast and I was shocked at how well it turned out. My fiance and I finished off an entire loaf during dinner because it was so good. I followed the recipe exactly. It doesn't need any changes. This will definitely go in my recipe book for life.

Dave's Low Country Boil

This was too bland with just the old bay seasoning. Unfortunately I printed off the recipe long ago and didn't have time to re-read the reviews for additional opinions and ideas. I will make it again, but will add additional spices for more flavor in the finished dish.

Buttermilk Fried Chicken with Gravy

In theory this was a good recipe and I was very excited about it half way through and then I cut into raw chicken. The outside was almost burnt, while the inside was still uncooked. I didn't even have the oil too hot. I heated it on a temp of 5 and then turned it down to 4 for the 40 minutes. I had to end up putting it in the oven to finish cooking it and the crispy outside was way overdone by the time the chicken was cooked. I can't imagine I did anything wrong. I plan to try it again, but perhaps lower the temperature even more and use smaller pieces of chicken.

Cream Cheese Frosting II

This is a great recipe. The icing isn't too sweet and really has that cream cheese taste. The only downside I've found is that the icing is somewhat too runny to ice a two layer cake. It drips down the side and doesn't stay in place. I try to refrigerate the icing for at least 2 hours before icing a cake, to avoid this problem.

Black Bean and Couscous Salad

This was a hit at my fiance's birthday party. We have several vegetarians in our group and I made this dish for them in addition to veggie burgers and everyone ended up eating it at the party. The flavors are very balanced and the dressing (I made a double recipe of that) really gave the couscous flavor and texture. I hate dry couscous dishes and this was NOT one of them!

Banana Crumb Muffins

My sister made this recipe when I was visiting home and they had good flavor, but were a little dry. I tried to make them this week and added about 1/4 c. vegetable oil in addition to the butter and they were FABULOUS!! Very moist and flavorful. I will be replacing all banana muffin recipes with this one from here on out!!

Crispy Rosemary Chicken and Fries

This is the perfect meal for those nights that you just don't feel like cooking. It took 10 minutes to throw it all together and put it in the oven so I could relax instead of stand over a hot stove. I realized in the beginning that I accidently had bought skinless chicken thighs, so I didn't end up with crispy chicken, but it was still delicious anyway. Definitely use the fresh rosemary, it makes all the difference.

MMMMM... Brownies

I don't know what I did wrong. I used a really high quality chocolate to make them even better and the texture was nothing like described in the other reviews. Mine were cakey and barely tasted like anything. Very disappointing.

Parker's Famous Margaritas

I made this recipe for cinco de mayo and they were a hit. They taste just like the margaritas served in authentic mexican restaurants. I didn't have time to squeeze fresh lime juice, so I bought a bottle of the pre squeezed and they were still excellent. This recipe is going into my family recipe book!
