Venison Cheddar-Jalapeno Summer Sausage

Reviewed: Dec. 25, 2011
I substituted lean ground beef for the venison and it was a big hit! Super easy to make since you don't need to use a casing. Will make again often!!

Three Cheese Garlic Scalloped Potatoes

Reviewed: Jan. 7, 2011
Very good scalloped potato recipe. I made as written but will eliminate the butter the next time as it rose to the top and looked greasy and I will salt & pepper the potatoes instead of on top of the cheese. I also used scissor cut garlic chives to sprinkle over the top. Excellent garlic taste!

Stuffed Peppers with Turkey and Vegetables

Reviewed: Nov. 3, 2010
This is a great low carb recipe! No rice or flour. I didn't have any turkey so I used half ground beef & half italian sausage. I used red, green, yellow, & orange peppers. I used the top of each to chop up for the filling. I used all the filling ingredients except for the 1Tbl of tomato paste- I used some of the drained juice from the tomatoes instead. The flavor is really good and the presentation was incredible with all the colors of the peppers.

Mango Cream Sauce

Reviewed: Oct. 14, 2010
I needed a mango sauce for tropical pancakes and I chose this recipe. I used a 15 oz jar of mangos that I put in the blender for a smooth sauce and I substituted amaretto in place of the brandy and it was to die for!! I am thinking of bottling it for gifts!

Surimi Salad

Reviewed: Apr. 1, 2010
Excellent! So much better than I thought it would be! I added a sprinkle of Old Bay seasoning instead of the Seasoned Salt and also added a 4oz. can of chopped olives. A food chopper is a must to get the surami, celery and onions chopped in small pieces- a great time saver too.

Cream of Tomato Soup

I did not care for this at all! I was surprised at how many rated this so high. I did not like the chopped onions in it and I am an onion lover! I followed the recipe exactly as stated- did not substitute anything so was very dissapointed. Campbell's is better!

Roasted Vegetables

Reviewed: Sep. 4, 2008
Excellent! I used red, yellow and green peppers, red onion, zucchini & carrots. Everything I needed to use up in the refrigerator. The fresh herbs were great- I also used sea salt and garlic salt. Roasted at 425 for 15 min- flipped the veggies and baked another 15 min. I think the basalmic made this- don't forget to use it.Wow- what a wonderful aroma in the whole house!

No Bake Lime Mousse Torte

Reviewed: Apr. 28, 2008
Very good and refreshing- not a heavy taste- very light and I didn't even have to bake it! 2nd time I made it I substited lemon for the lime and that was very good too. Be sure to add the zest as it wasn't the same without it!

Shepherd's Pie VI

Reviewed: Mar. 29, 2008
I made this wonderful pie with a few additions- I added celery and red and yellow diced peppers to the onions and beef- the beef sauce was a little bland so I added a tbl of worsteshire sauce and a tbl of steak sauce. Wow- what a differce! I made an extra one for a friend- just home from the hospital and she called it a Gourmet Shepherd's Pie! I also really liked the mashed carrots in the middle- I will be making this more often!

Spinach Corn Muffins

Reviewed: Dec. 31, 2007
I made these in my miniature muffin pans and although they were good- they were not great! I baked for 15 min. It needs to be sweeter so I will add more brown sugar- so I will try 1/3 cup next time and then add some seasonings-maybe 1 tsp of italian seasoning. I will let you know if this helps to give it the WOW factor!

Sausage Applesauce Appetizer

Reviewed: Nov. 30, 2007
I used this sauce on slices of precooked jalepeno sausage and served with toothpicks as an appetizer. Everyone loved it- I had tried this sausage previously and it was way to spicy for me but this sauce was wonderful and toned down the spiciness of the sausage. Want to try this again using precooked garlic sausage.

Sangria! Sangria!

Reviewed: Oct. 11, 2007
Excellent! I left out the lemonade, sugar and cherries and substituted lemon/lime soda for carbonated water and it was fantastic- I needed to change the quantity to serve 50 people. I bought several gallons (4 liters each)el cheapo red wine and adjusted the remaining ingredients to make several batches. I don't even like red wine by itself but this was muey fantastico!!

Great recipe- I also added 2 eggs and 1/4 c oil per other reviews and sprinked brown sugar on top of each muffin. I also added a cup of raisins to the batter too- next time I'll try soaking the raisins in a little brandy bedore adding- can't wait to make another batch- I think I'll try making it in mini-muffin pans next time too.

Maple Salmon

Reviewed: Sep. 27, 2007
Fantastic-I doubled the recipe-then I grilled instead of baked to get some of the good crusty outside of the salmon. I served with tri colored fettucine nests of pasta. I then poured the leftover marinade into a 2 cup measuring cup and whisked about 1/3-1/2 c. sour cream into it and heated in the microwave so I could pour the sauce over the pasta and topped with pieces of salmon and snipped garlic chives. WOW what a taste sensation!!

Blue Cheese Beef Tenderloin

Reviewed: Sep. 19, 2007
This was really good! I live in Mexico where the beef is not aged. The beef tenderloin has very little flavor here so I marinated this for 8 hrs and then sliced it in about 3/4 in slices- put it back in the marinade while I put a little olive oil in a pan and heated the pan to 250 (electric skillet) then seared the beef slices for about 2 min on each side- then served it with the blue cheese sauce. The meat was fantastic and very tender with a great flavor even without the sauce. I will be trying the marinade on other cuts of beef also. Muy Bueno!

Jamie's Cranberry Spinach Salad

Reviewed: Sep. 4, 2007
As the 1000th reviewer I am glad to say this is a great salad! I love cranberries because they are tart and the dressing went perfectly with it. I also add either goat cheese or feta cheese for a red, white & green salad.

Grand Margarita

This was absolutely the worst margarita I've ever made! No one liked them. I followed the recipe exactly and can't figure out why others liked them! If you like frozen margaritas made with limeade you will hate these.

Bourbon Pecan Chicken

Reviewed: Jun. 8, 2007
Thank you so much for this recipe and to all the reviewers who gave it 5 stars! I needed a chicken recipe for a Culinary contest and this is the one I chose. I had all the ingredients except for the bourbon and substituted my husband's irish whiskey. I renamed the recipe Pecan Crusted Chicken with Irish Whiskey Sauce and won 1st Place!!! One of the judges was a retired captain of a famous cruise line and he went back for a 2nd helping! You must try this one if you want to impress someone!! Another reason I liked it is because I did not have to use my oven to make it.
