Classic Bran Muffins

Yum! I really enjoyed these, they were actually better the third day. I used half the amount of sugar, applesauce instead of oil, half whole wheat and half white, oatmeal/oat bran/Ezekial's version of grapenuts instead of wheat bran, and a mix of dried currants and blueberries instead of raisins.

All-Around Good Smoothie

Definitely not my favortie smothie. I used agave instead of honey and left out the protien powder. I think it needs more banana and less milk. Nutrionally speaking, this is a very balanced.

Fig and Goat Cheese Pizza

This was delicious! Great onion mixture with thyme and fennel. I took one reviewer's advice and put the goat cheese first. I couldn't finish it all and it has been good for days after. I also used the Whole Foods brand 365 Whole Wheat Pizza Crust - yum!

Mexican Casserole

very easy and quick. I used a combo of green and yellow onions - sautéed them, then added the refried beans. I used about 1/4-1/2 cup of cheese. Instead of tortillas I de-thawed some frozen pita bread I had - it all turned out great!

Orange and Lentil Soup

This is awsesome! I used Better than Boulin to make my chicken stock. I used a little more than half a Tablespoon for six cups of water (the given ratio is too salty for me). Increasing the water amount did not make this recipe too liquidy either. Yum yum yum!

Harvest Rice Dish

delicious! I cut the recipe in half. I didn't have any wild rice, so I used 1.5 cups of cooked brown rice. I used frozen cranberries (thawed and halved). I used one onion. I used dried mushrooms and gave them life by cooking them in chicken broth. Altogether, it was great! Now I'm just thinking of a main dish that can go with this.

Saucy Lima Beans

This dish was delicious! I didn't have half/half so I used 7 parts skim milk and 1 part butter. Because of this I added flour at the end to thicken. I was contemplating cooking the onions in olive oil, but the butter gave it a great down-home flavor. I also used 1/2t dried parsley.

British Bread Pudding

This was a really great base. I made 1/4 plain, 1/4 with raisins, and 1/2 with frozen cranberries. My favorite was with raisins. It would be great with apples and an increased amount of cinnamon. I only used 1/2 teaspoon of Nutmeg and it was almost too potent, I can't imagine what it would be like if the recommended 1T was used. I also added an extra egg. Compared to all the other recipes, this looked like the quickest recipe. My friend loved it. So great recipe in great time. Thanks for sharing!

Crunchy Corn Medley

This was a great base recipe. I have a ton of frozen veggies that I wanted to use, so this recipe was perfect. I just kind of used the veggies I had around - Whole Foods Private Label 365 Organic frozen peas and carrots mix, frozen corn, frozen bell peppers. I also added some fresh celery and sweet onion (b/c I didn't have any green onions). I mixed a fraction of the vinegar, veg oil, and sugar. It was delicious. Will definitely use this recipe again to use up veggies. I would definitely not use 1/2 cup of sugar - I probaby used at most 1 T. Enjoy! :)
