Magic Cookie Bars I

i took the advice of other reviewers and poured some of the milk over the crust before adding coconut and chocolate chips. these were a hit at the last potluck i took them too!

Chocolate Covered Cherry Cookies II

so, i've been making these for a few years, and haven't had a problem baking them with the frosting. if it melts too much, i just re-apply a little frosting after they're out of the oven. my tweaks: add a few teaspoonfuls of the cherry juice to cookie batter, and replace an 1/4 c. of flour with a 1/4 cup ground up pecans(gives moisture and nutty flavor). also, i use brown sugar in lieu of white sugar, and i use whole cherries. this is a very rich cookie, and i recommend keeping any leftovers in the fridge.

Stir Fried Kale

this was a wonderful base recipe! i took the advice of others and added my breadcrumbs after wilting the kale a few minutes. i always trim away the stems(don't care for the flavor), and use the leaves only of the greens. i began the recipe sauteeing the onions but i minced some hick cut bacon, and reduced the olive oil to about a tsp. then i added the garlic, then the kale, and afer wilting i added about a 1/4 breadcrumbs. yum!

Pecan Pie V

flavorful, rich, but grainy in the texture, and mine turned out greasy. i would attempt it again, and tweak the recipe a bit.

Vinegar Pecan Pie

corn syrup is *so* sweet, and i don't happen to keep it in my pantry because i never use it. so in finding this recipe, i had to try it. WOW!! this is such an easy and quick recipe, and sooo good. the "pie" came out custard-y, just the right sweetness and light. not at all the heavy, greasy, gut bomb pecan pies can sometimes be. well worth trying, even if you wrinkle your nose at the vinegar. my tweaks to the recipe: used light brown sugar instead of the white sugar, upped the vanilla a half a teaspoon, added a couple dashes of cinnamon, and melted the butter before mixing with the sugar.

Applesauce Oatmeal Cake

made this today, used 3/4 cup brown sugar and 3/4 cup white sugar, didn't have raisins so i added 1/8 cup applesauce and 1/4 cup oats, and because i love spice, added a 1/2 teaspoon allspice and 1/4 teaspoon more nutmeg, and i took this cake to a class i go to, and i kid you not, it was gone. i was told by two of them that they don't even like nuts, but that it was perfect with it(i used coarsely chopped pecans and walnuts). it smelled and tasted wonderful, very moist, chewy, and i had cooked it in a bundt pan with no problem. so glad i found this recipe, a definate hit!

Egg-free Brownies

i am so thankful i found this recipe on here. i am out of eggs, long day, didn't want to run to the store. i will state i did not do the recipe to its exact specifications, because i had my chocolate and butter melted and ready for my usual recipe when i eggs in the house. i added three big tablespoons applesauce because, with all the flour i was wondering how moist they'd be. mine turned out moist, still a bit on the cakey side, which i'm more a chewy brownie fan, but the recipe i think is a great basic recipe that comes in handy. it can easily be added to, and i will use it again.
