Brownie Chocolate Chip Cheesecake

Easy and very tasty. I added chopped pecans to the brownie mix. Drizzled it with caramel sauce once baked, added the cheesecake topping. Then decorated it with more chopped pecans, chocolate sauce and caramel sauce once done. I called it turtle cheesecake and it was very good!

Seven Layer Tortilla Pie

Good! Even the kids ate it. Put in lots more cilantro and garlic than called for but pretty much followed the recipe otherwise.

Cupcake Graveyard

These are adorable! I made these for our Halloween party. I used arrowroot cookies to get the oval tombstone shape. Used a little marshmallow pumpkin and candy skull for garnish. Love them! I think next time I will use green icing for grass with cookie crumbs just in front of the tomb.

Chicken Pot Pie IX

My gang liked it alot. Made TONS. I dished some into mini pie crusts I had in the freezer for butter tarts. The kids loved the mini ones. I think it would make two decent sized pies. I added a stock cube to the chicken cooking water, used that water as the broth with another cube added. Skipped the salt and celery seeds and used 1/2tsp celery salt instead. Put the peas in late in the cooking process and added a block of chopped frozen (defrosted) spinach at the end.

Campbell's® Slow Cooker Savory Pot Roast

This was a big hit with the family. Based on reviews that said it needed liquid I added 1/2 cup of veg stock. That was NOT needed. There was way too much juice in the bottom of the crock pot after. Next time I will follow the recipe exactly.

Quinoa and Black Beans

Very tasty and easy. We've been looking for quinoa recipes. I used one 19oz can of beans instead of two 15oz cans. That was more than enough. The fresh cilantro is a must and really makes the dish. This will be a family favourite for sure. All ingredients we have in the house most of the time.

Awesome Grilled Cheese Sandwiches

Now this is the way to make grilled cheese sandwiches! We were out for swimming lessons tonight but I prepped these beforehand so they were ready in a jiffy when we got home and everyone could eat at once. I put apple slices on the kid ones and tomato and fancier cheese on the adult ones. Very yummy.

Brown Sugar Meatloaf

Worked out pretty well. I used a ground beef and ground turkey combo, used breadcrumbs instead of crackers, added chopped parsley. Based on other reviews I put the glaze on top instead of bottom, and cooked it on slices of bread to soak up some fat.

Tuna Noodle Casserole II

Kids and hubby liked it. I added peas for colour and since they nest nicely in the pasta shells. I used bread crumbs instead of potato chips on top and grated cheddar instead of slices. All in all easy and good. Made lots too.

Grilled Cheese and Veggie Sandwich

We liked it, haven't tried the kids on it yet. Used butter instead of margarine and alfalfa sprouts instead of bean sprouts. Aside from that it was good. We grilled it panini style with a weighted pan on top of the sandwich. They grilled perfectly. Nice alternative to traditional grilled cheese.

Make Ahead Lunch Wraps

I have been making these now for YEARS. They are a staple in our home for lunches and emergency dinners. I also give a bag to all new moms for quick, healthy meals for nursing mothers. I use salsa instead of diced tomatoes, frozen corn instead of canned. Half and half pepper jack and old cheddar. Delicious!!
