Banana Sour Cream Bread

Very moist! I added macadamia nuts instead of walnuts. I split the batter and made muffins with chocolate chips, muffins without, and also mini loaves. I adjusted the cooking time to each batch. Cooked until a toothpick came out clean. My family loved them all.

Curried Coconut Chicken

Good flavors. I followed the advice of others. I used 1 Tablespoon of sugar. Added red and orange bell peppers. I drained the tomatoes and cut back on the tomato sauce to 1/2 can. I should have cut it back to 1/4 can. It got a little to soupy. I would definately make it again.

Favorite Old Fashioned Gingerbread

Very good. It wasn't as moist as I had expected but that could have been my oven's fault. We added whipped cream on top which made it perfect. Good flavor.

Coconut Bread Pudding

I used all flaked coconut because I did not have fresh. Also, I used vanilla extract for the same reason. It turned out great. I shared this with my teacher friends and they all loved it.

Easy Chicken Cacciatore

We loved this. I took the advice of others and omitted the green beans but added mushrooms, more garlic, and white wine. We put the dish over linguine and topped it with shredded parmesan. Yum!

Sea Bass Cuban Style

Carrot Oatmeal Muffins

We loved this recipe. Very moist and delicious. I did not have wheat flour so I used all-purpose instead. I also cut back the sugar a bit and did not do the filling...and they turned out great. I have already made them twice.

Fajita Marinade II

We used tri-tip steak and it turned out well. The flavor was good and the meat tender. We added "Mexican Seasoning" to the meat right before grilling. This added a little more zip to it.

Creme Brulee II

I added the extra egg yolk and baked it for an additional 20 minutes (45 total). I baked two recipes, one with the damp kitchen cloth (which I found odd) and one without. I did the water bath to both. Both turned out with the same consistency. I also topped and broiled one with white sugar and one with brown sugar. The brown sugar turned out better. We all loved the flavor! Would do it again. 4 stars because of the adaptations.
