Angela's Awesome Enchiladas

Definitely delicious!! I skipped the cream soup and made a white sauce instead of butter, flour, milk, chicken broth, salt and pepper, and then stirred in the sour cream and chili powder to that sauce. We also ate the enchiladas with jarred jalapenos scattered on top. Loved them!

Spicy Chicken Breasts

Very delicious! I used someone's suggestion to marinate using the spice mixture and olive oil. I also cut way back on the cayenne so that my kids could enjoy it. Definitely livens up a boring chicken breast!

Pineapple-Orange Punch

Pumpkin Bread IV

Excellent, moist pumpkin bread - my new favorite! I decreased the sugar to 3 cups instead of 4 - I thought 4 seemed like a lot. And I used fresh pumpkin puree that I had cooked down, and the results were perfect. Oh yes, and I did add a cup or so of mini chocolate chips!

Amish Friendship Bread III

This recipe is far better and healthier than the original friendship bread. I substituted some of the white flour for whole wheat and grated the apples and nuts to make them more acceptable to my children. It makes a very moist and delicious breakfast or snack.

Creamy Twice-Baked Potatoes

These potatoes are amazing! I doubled the recipe when I had company over, and they loved them. I didn't make any changes except that I was out of paprika, so I just melted a little shredded cheddar over the top near the end of the baking time instead. I will definitely make these again, but likely always double or triple the recipe to make the work worth it.

Couscous with Chickpeas and Carrots

This recipe was delicious - and a snap to prepare! I didn't have any broth on hand, so I used boullion, and I used whole wheat couscous as well. I thought the flavors were great, and even my picky husband told me I could make it again! Score!

Peach Muffins

My family loved these! However, I made a few changes. The first time we had them, we thought they were too buttery, so I only added 1/4 cup butter the next time. I also decreased the sugar to 1/2 cup, used low-fat plain yogurt instead of sour cream and sprinkled pecans on top of some of the muffins instead of stirring them into the batter (some in our family don't like nuts). We really liked the end result of these changes.

Jamie's Minestrone

I made this recipe with excellent reviews from a group of friends. I used several suggestions from others - increased amount of chicken broth and water, used only 2 zucchini, did not use spinach because of preferences of others. I also used diced, Italian seasoned tomatoes instead of the tomato sauce (I pureed one large can and added one small can as is). Next time I think I'll use 2 cans of beans and add them near the end so that they don't break down as much.

Traditional Pita Bread

This is a great recipe! I actually made it with half whole wheat flour and half unbleached and it came out perfectly. I rose the rounds right on the greased cookie sheets to save the transfer step. I also mixed the yeast, salt, and whole wheat flour in my kitchenaid first then added the warm water and then the rest of the flour like I do for other breads I make. I find I get better results this way than by dissolving the yeast first in the water.

Annie's Fruit Salsa and Cinnamon Chips

I made this recipe for a party, and people raved over it! I followed the recipe mostly as written, using Granny Smith apples and blackberries instead of raspberries. However, when I made the cinnamon chips, I did not use butter spray, which gives me the creeps, but I brushed melted butter over the top of each tortilla and then sprinkled the cinnamon sugar over the top. I did not brush butter over a second time. Also, be sure to watch the chips carefully in then oven. I found that they were done a minute or two earlier than the prescribed 8 min.

Black Bean and Corn Salad II

This salad was delicious! I brought it to a party and served it with Tostitos scoops corn chips. I know the recipe says that the cilantro is optional, but in my opinion, it is essential. It was still delicious the next day, but I cannot say what it tastes like on the third day because there was none left!

Raspberry Almond Muffins

These muffins are very good. I did not find them too buttery like some said. Yes, they were a little tart, but personally I liked that. I loved the almonds in them - what a perfect combination! I also liked that they were very quick and easy to make. I'll definitely make them again!

Grilled Chicken Adobo

This is the first time that I made a recipe using chicken thighs that my husband actually liked! This recipe was delicious. I made it exactly as the recipe is written, and I used my grill pan to grill the chicken indoors. I served it over rice. My family highly recommends it!

Mexican Rice III

Everyone seemed to like this rice dish, and it was easy enough to make. I left out the jalapeno for the sake of some and didn't add the chicken bouillon either. I'd make it again to complement a Mexican meal.

Ma Bethie's Zucchini Bake

This recipe was good, but in my opinion, not amazing. My 2-year-old son liked it, which was a plus. I would decrease the butter next time, it was too buttery. Also, I used a homemade biscuit mix, so maybe my results would have been better with regular old Bisquick.

Broccoli and Ramen Noodle Salad

I brought this to a party and went home with an empty bowl! This is a delicious salad. The only thing I changed was that I used a bag of regular coleslaw mix rather than the broccoli slaw, just because my grocery store didn't have a big enough package of the broccoli slaw. Still turned out great!
