Cheese Cake Cups
excellent! make just the way the recipe is written, but add a 1 1/2 teaspoons of vanilla and 1/4 teaspoon of ground nutmeg to the cream cheese mixture. it adds wonderful flavor to the mixture that is otherwise plain, but still delicious. I like to serve them with a variety of toppings. Here are suggestions: cherry pie filling, strawberry pie filling with chocolate curls in top, apple pie filling (w/ apples chopped smaller) then sprinkled with cinnamon, blueberry pie filling, carmel sundae topping sprinkled with chopped walnuts or pecans.

Angel Chicken Pasta
Great . . .BUT . . . there is entirely too much sauce. Most measurements should be scaled back a bit, or make more chicken and pasta and leave the sauce measurements as listed. I added sliced roasted red pepper, button mushrooms, minced garlic clove, and pinot grigio. Was fantastic. Also used reduced fat cream cheese and healthy request cream of chicken soup with lower fat and sodium. Perfect combo, esp. if you're adding fresh mushrooms. Much better with that fresh flavor than canned mushroom soup flavor.

Sesame Pasta Chicken Salad
I've received many compliments on this recipe, having served it a few times. I would only alter a few things: add julienned carrots, sliced water chestnuts and pea pods cut in half on an angle- really adds nice color, texture and flavor. Knock oil down to 1/3 cup otherwise it is REALLY oily. I use fettucine noddles. If you are making this ahead and chilling it (which I would recommend), add half of the dressing while noodles are still warm and will soak up flavor. MMM! Toss the other half of the dressing before serving. I like it warm OR cold, but feel it is better cold. Still great the next day. Will make again and again!!
