Whole Grain Pancakes

I usually don't write reviews but I had to on this one. With slight modifications - this was fantastic! I skipped the cornmeal and increased rolled oats to 1 cup (was a bit too thick so I might do 3/4 cup next time). I also substituted 5 tbsp of honey for br sugar (I might do 4 next time, although 5 was good too). These were fantastic. So filling and sooo good for you!

Grandma's Slow Cooker Vegetarian Chili

I've made many many different recipes of veg. chilis trying to find the one I like. Out of all them, this one is the best! My husband and I really enjoyed it and I will definitely be making it again! I skipped tha baked beans and put 1 tbsp of cumin and 2 tbsp of chili powder instead of 1tbsp as the recipe calls. Yummy! Thanks for a great recipe (finally!).

Healthy Banana Cookies

If I could give it 6 stars, I would! It's absolutely awesome. I finally found a dessert that I can make that's healthy! I used REALLY ripe bananas and it actually was too sweet even though I didn't add any sugar. The dates were sweet as well so next time I won't use as ripe of the bananas. I also don't use oil so I used home made apple sauce instead. The downside of these cookies is that they are very high maintainance. It takes a while to spread on a cooking sheet making sure they are round (they come out just as you spread them). Also, it takes LOTS of time and patience to get them off the sheet without breaking them. You probably won't have that problem if you use oil instead of apple sauce. I don't use oil so I will continue using apple sauce - it's totally worth it!

Vegetarian Split Pea Soup

Awesome recipe. Very easy and great for a busy mom. I skipped the pasta and substituted with potatoes. I also skipped celery and the broth since I didn't have any on hand. Instead, I put water and some all-purpose seasoning (may be a tbsp). My 10 mths old had this too so I skipped the chile pepper as well. It was still yummy and SO easy to make! Definitely a keeper in our family. Thank you!

Grilled Peanut Chicken

It was just OK. The sauce was too thick and didn't have enough flavor. I doubled the amount of the sauce and still wish I had more. Soy sauce is almost non-existent and the curry flavor was very mild. Sorry, not a keeper for us. Will try the Chicken Satay recipe next time.

Pineapple Salsa

I absolutely loved it. Outstanding! I didn't change one bit and it turned out perfect. When I was buying mangos, they only had the not-so-ripe ones and it actually turned out better as the pieces weren't mushy. Enjoy!

Veggie Vegetarian Chili

Great recipe but wayyy too much oregano. I followed recipe and did the exact measurements and it had way too much oregano and was bitter. The texture was great though. My husband loves thick soups and he loved how thick this one was. Next time, I will also add garbanzo beans, cut oregano in about half and do 3 tbsp of chili powder... Didn't come out quite right with the original recipe.

Curried Coconut Chicken

Definitely really good. Based on other people's reviews, I didn't add the tomato sauce and added 2 spoons of sugar instead of 3. I will do a few things differently next time. I will add a little more curry (you could barely feel it there and we like our food spicy!) and I will go with the original 3 spoons of sugar. We are big fans of really sweet curried dishes so I feel with those modifications it will be just perfect. Finally, the sauce - I wish there was more! I love my rice soaked in sauce and even though all the reviews were mentioning there is too much sauce - I didn't think so at all. Great recipe - thank you!!
