Imitation Meatloaf

This was OK. I used BBQ instead of ketchup and added 4 cloves of garlic, halved the onion (it was still a lot!), and threw in a little frozen peas and carrots. It was still really bland and I have a TON of it left over that will probably never get eaten. Overall, it's interesting but too much of a pain to make for what it's worth.

Antipasto Squares

I've made this many times in several different variations (I usually just throw in spinach instead of peppers.) The only thing bad about this recipe is the price of all the ingredients.

Cowboy Jack's Beer Bread

I used a pumpkin spice ale and added a small handful of chopped walnuts to the dough. I wasn't really happy with it though. The dough was very dry and thick (definitely not "pourable") and the bread came out super dense and hard. The flavor was ok though I would have liked it to be less sweet. I'll find a different recipe next time.

Thai Peanut Dressing

This was OK. Very peanutty and very thick. Not really like any real thai food that I've had, but not bad. I served it over whole wheat spaghetti noodles with stir-fried veggies.

Bry's Chocolate Lamb Chili

My husband loved this but there was something very weird about it. I didn't care for it at all. I would want a lot more tomatoes and less beans. Maybe it was the beans I used but there was a really bad bitterness that ruined it for me.

Sour Cream Coffee Cake

I used fat free sour cream and walnuts instead of pecans and it turned out really well. I wasn't sure if it would since the batter was so thick and sticky. It was very hard to spread into the pan ('pour' is definitely not the word for it). very moist and tasty!

Quick and Easy Alfredo Sauce

I quartered this recipe and simmered it down to a thick sauce and made spinach alfredo pizza. It was excellent. I didn't know making alfredo sauce from scratch could be so easy.

Carrot Cake

I made cupcakes with this recipe for my husbands birthday. It is very close to my mom's zucchini bread recipe... and, not surprisingly, tastes a lot like it as well. I used a 'trail mix' of sunflower seeds, pepitas and raisins instead of walnuts and added just a bit of vanilla. I ended up using canned cream cheese frosting because I didn't have the ingredients to make my own but they turned out fantastic! Cupcakes only need to cook for 25-30 min.

Spinach Pancakes

This was great! I added a few more eggs and mixed in some parmesan and feta cheese for flavor. The feta really made the recipe for me. My husband and vegetarian friends loved them. I want to make them again soon!

Oatmeal Peanut Butter and Chocolate Chip Cookies

I used mini chocolate chips and added some cinnamon. Everyone loved them! They ended up flat and crispy but very flavorful. Sort of an adult cookie, not overly sweet.

Peanut Butter Carrot Cookies

As some have suggested, I used whole wheat flour, added just a bit of cinnamon and vanilla, omitted the chocolate chips and reduced the sugar to 1/2 cup. They were very tasty and interesting but too moist, they just fell apart. I'm not sure what I did wrong but I might try it again sometime. I thought the peanutbutter flavor is kind of hidden and I'd more likely call these oatmeal carrot cookies.
