Spinach Chicken Parmesan

This was a pleasant surprise. I used fresh spinach and sauteed it in the butter/flour with some garlic before adding the milk. I also topped the cheese mixture with some shredded mozza and chunky/crispy bacon pcs. The sauce was really good and I used it on the rice & green bean sides.

Cajun Baked Catfish

Although I did not make the recipe exact due to lack of ingredients my version was fantastic and I plan to make the 'real' one again. I used Tilapia and had to sub chili powder for paprika and it turned out great. I did cook mine longer though. Thanks for posting.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

This is an easy and versatile recipe. I have made it 3 times with different variations. I always use chips instead b/c I don't usually have the squares on hand. The 1st time I only had 1/4 cup butter so substituted extra peanut butter to make the rest. Today I added peanut butter chips to the batter along with the chocolate. This recipe is definitely one of my cookie staples - a big hit in our house.

Flourless Chocolate Cake I

This was incredible. It was very rich and moist. I did mix bittersweet & semi-sweet chocolate and I topped it with peanut butter icing although it did not need it. Hands down this will be the birthday cake of choice in our family, thank you for sharing!

Slow Cooker Pepper Steak II

I doubled the recipe and used stewing beef, added worchestersire sauce, a bit of ginger, and some hot pepper sauce as we like our food spicy. It turned out great! I will definitely make again but I will likely use a little less soy sauce as it was a bit salty - even with the low sodium sauce and omitting the extra salt.

Tuna Noodle Casserole from Scratch

I was actually disappointed as I was expecting this to be amazing. It was ok. It tasted too buttery for my liking and I didn't even use as much as called for; however it was completely finished. I will try it again and tweek it to our liking (more spicy for sure) as it is definately a good base. Thanks for the recipe.

Health Nut Blueberry Muffins

Of course i changed it up for my chocolate loving husband and subbed c.chips for blueberries - a big hit I added a cinnamin sugar-oatmeal topping. They were very good, very moist and lasted for days. Who could ask for more - thanks for the recipe, a keeper in my house!

Banana Bread V

This recipe is quite good. I followed others' suggestions and mixed brown and white sugar, 1/4 cup extra banana and a little cinnamon and vanilla always enhances a recipe in my opinion. I added chocolate chips as its a prerequisite in my house. As promised, it was moist with a very nice banana flavour. My preferance is for a more dense banana bread though so the search does not end here. Thanks it's still a keeper!

The Amazing Swedish Meatball

I decided to try something different for dinner tonight. I should have known it would be too salty with the amount of salt called for (and I followed it exact) but you live and learn. I'm sure the meatballs themselves are great though. Sorry.

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

I made this today for my husband's birthday and it was a huge hit, even with my brother in law who never eats desert. I used Fry's cocoa as I couldn't find Hershey's, skim milk and substituted coffee for the boiling water. The icing was really rich which pleased all the chocolate lovers. I also made a peanut butter filling for the middle layer which turned out great. I will definitely be hanging on to this recipe.
