Bean Salad

Every time I make this I get rave reviews. It's good as a side salad at BBQs or as a dip for chips - and it's easy as can be!

Homemade Peanut Butter Cups

Holy bananas these are great!!! I use soy margarine instead of butter and dark chocolate chips instead of milk chocolate. These get rave reviews from everyone who tries them!

Annie's Fruit Salsa and Cinnamon Chips

This recipe is amazing! I like that the chips are baked instead of fried, and the fruit salsa is so fresh and delicious. I don't change a thing!

Indian Chicken Curry (Murgh Kari)

This was missing something, but I'm not sure what. I used tofu instead of chicken which worked well, but the spice mixture was missing something. I probably won't make this again.

Pistachio Crusted Chicken

I loved this! As a vegan, I used Gardein's chick'n scallopini, and substituted agave nectar for the honey. I also didn't have to bake it for as long, obviously. It came out SO good! Anyway, I will DEFINITELY make this dish again and again!

Vegetarian Shepherd's Pie II

Really enjoyed this. I used miso instead of the vegemite and it turned out fine. It's really delicious - but yeah, I'd double it next time I think considering it's only 186 calories per serving. Great vegan shepherd's pie, though!!

White Bean Spread With Garlic & Rosemary

Very good - it was a hit. The only thing I'd change is maybe reducing the rosemary a little bit. That ended up being a very powerful taste. Otherwise, great!
