Yummy Margaritas

I've made this recipe but with 12 ounces of beer, tequila and water in addition to the limeade for an "on the rocks" margarita. It's the best!

Warm Blue Cheese Dip with Garlic and Bacon

Even though I don't know if I'll make this again, I had to give it 5 stars. It proved true to the other reviews - even people who don't like blue cheese liked it. I immediately tasted the blue cheese, although I made it so I knew it was in there. However, two other people were surprised when I told them blue cheese was in it. I served it with thin toasted slices of french bread. It doesn't make a very large quanity. But it was enough for a small group. I must say it was a nice change from all of the typical dips or appetizers. Thanks!

Great Chicken Salad

I LOVE LOVE LOVE this recipe. There is a restaurant that used to be in my town that had the best chicken salad. I could never figure out how to make it but I think this was it. Thank you!

Cadillac Pimento Cheese

I had my doubts but this turned out so good. I changed a few things but I chalk it up to personal taste so I still give it 5 stars. I used a little garlic salt instead of garlic powder and light cream cheese and half light mayo/half regular mayo. I used the small block of Velveeta shredded and it wasn't enough cheese so I added some mild cheddar. The only thing I might advise others to change is to add more cheese if you prefer yours to be less mayo"naissy".

Strawberry Cream Cheese Spread

I thought this was far better than what you buy in the tub at the grocery store. I shaped it into a heart for a lingerie shower and served it with vanilla wafers and chocolate wafer cookies. Very good!

Hummingbird Cake III

This was so moist and flavorful and everyone loved it! Most went back for seconds. I made only two layers and baked them about 15 minutes longer and I used a different cream cheese frosting recipe that is less sweet. The batter was really thick unlike "plain" cakes but it didn't turn out too dense at all. It was just right! Thank you for the recipe. Oh, and my bananas were not extremely ripe - just a slight bit green around the tip but it wasn't a problem.

Sweet Dinner Rolls

YEAST ROLLS - that's what these are! You know those rolls you get at Logans or Ryans? Only somehow better! I didn't know it was possible to make them at home, from scratch. I stuck to the recipe until after I removed the dough from my bread maker. Then I just made 16 rolls out of them, without brushing them with butter. After they were done I did brush them with butter, though. It was so quick and easy. While they were rising I made soup. I cooked them for closer to 10 minutes and they were just turning brown on top. This one of those recipes I wish I could give 10 stars. thank you!!!

Sensational Irish Cream Cheesecake

I made a few changes but only because I know my personal taste. I added a little instant coffee granules to the melted butter for the crust and I omitted the chocolate chips because I don't like chocolate in my cheesecake. However, I thought the amount of Irish Cream in the recipe was sufficient. I could definitely taste it - don't know if it had anything to do with the chocolate not being in there to overpower it. And I was unsure of how it would be in texture due to the only main ingredients being cream cheese & eggs - no sour cream - but it was actually one of the best textures ever! I took someone's idea and added a little Irish cream to the whipping cream, too. Oh, and I did cook it at 350 for about an 55 minutes with a water bath rather than at 375. No cracks at all, not brown at all yet it was done all the way through. Overall, great!

Classic Tiramisu

Very good flavor and consistency. It was really much easier than I thought making a custard would be. I made it with softened cream cheese since I couldn't find mascarpone and it still worked. Just a little hard to get the lumps out.

Cinnamon Rolls III

I've never made cinnamon rolls before so I followed the recipe exactly and the turned out great. I did arrange them in the glass pan and refrigerated them overnight - then took them out and let them sit for about an hour before putting them in the oven the next morning. They turned out great. :)

Pecan-Coconut-Chess Pie

Great taste and easy. I left out the coconut and added extra pecans and it turned out just as I'd hoped - like a slightly firmer and less sweet version of a pecan pie. I did need to bake this uncovered longer after I removed the foil and it was still runny in the middle even after cooling. Don't know if it had anything to do with my modifications. But it was still really good!

McCormick's BLT Dip

Great outdoor recipe. By accident I found out that adding some of the seasoning to the unpeeled shrimp and letting it marinate for a few hours before cooking will give the shrimp much more flavor.

Figs with Goat Cheese, Pecans and Bacon

Very rich and yummy. However, I cut the bacon in thirds rather than half the slices. I don't if my figs are just smaller than most or what. But next time I may try using a whole fig since the taste of the fig and cheese got a bit lost. Still a great appetizer!

Fish Chowder

I really liked this recipe but I did modify it a little. I added a can of crab meat, which added another texture and subtle flavor. And I used Red Snapper my husband had caught deep sea fishing instead of cod. Next time I might add cream or something for a slightly creamier flavor. But overall, very good!

Catherine's Spicy Chicken Soup

Very good! I altered the recipe a little because I halved it. I used chicken broth instead of water and boullion, too. I added the whole can of tomato soup even though I halved it and omitted the whole tomatoes. I used mild salsa but added a few spoonfuls of chopped canned jalapenos. And I used drained pinto beans instead of chili beans. Excellent!

Irish Cream Truffle Fudge

Very good. Everyone loved it. I thought the Irish cream was very easy to detect. Other people asked, "does this have bailey's in it?" so it seemed to be a good balance of the flavor. The texture was great, too. I just melted the stuff for the last layer in the microwave all together rather than on the double boiler and it turned out fine. I put it on for a minute, stired and then I think for another minute or so.

Vegetable Quiche Cups to Go
