Penne with Chicken and Pesto

Just the right amount of pesto and cream. Very easy to make. I used canned salmon (what I had on hand) and it was good. My kids gobbled it up, and my husband (who is usually picky about creamy sauces) liked it too. Highly recommended!

Salmon Mac and Cheese

Yummy! I used double the amount of Salmon and I used half and half instead of milk. I would say it could use a little more "sauce"... but that is just my personal preference. I will definitely be keeping this and making it again.

Pesto Sauce

Very good recipe. I used pine nuts myself, but I am sure the walnuts would make a good substitute if you need to save several dollars. Also, I used 2/3 cup of olive oil only, and in the future I think I will take the suggestion of substituting broth for some of the olive oil. Thanks for sharing it!

Creamy Pesto Shrimp

Excellent!! And not to difficult... just keep the flame low. I agree with the earlier recommendations to make it lower fat for regular consumption - I only used a couple pats of butter, and it was still great.

Mexican Shepherd's Pie

A great, reasonably quick and easy family dinner. It is nice because meat, vegetable and bread/starch are included in the one dish. The cornbread layer kept the meat moist.

Taco Seasoning II

I hardly use store mixes because many include MSG (bad for kidneys) and other chemicals, etc. While others may prefer the taste of the store packaged mix, it maybe because of the MSG. I found that this really captured the taste of the typical taco seasoning packet without the mystery ingredients. Thanks for sharing it!!!

Creamy Cilantro Chicken with a Kick

I tried this recipe with 8 thighs too. I doubled everything for the sauce except the sugar because I like gravy and so did my guests. It was GREAT. It is so easy because you can throw all the ingredients in the processor rather than chop it by hand. I was running out of time to grate the lime zest, so instead a squeezed the juice from one lime into the sauce - it was really quite good. My guests and my husband RAVED about it. Also, my broiler doesn't work, so I baked the chicken at 350 for about 30 min. after marinating (but boiling the sauce separately as the recipe indicates).
