High Temperature Eye-of-Round Roast

Perfection! I love recipes like this - simple, tasty and bullet-proof. Only changes I make are the rub each time. Tonight I used a McCormick Mesquite seasoning and it was AWESOME! Additionally, I cook for 12 minutes per pound to get our desired doneness. Used this recipes about 6 times now and love it more each time! TY!

Day Before Mashed Potatoes

I modified this a little bit and it has been my favorite Mashed Potatoes recipes for about 2 years now. MODIFICATIONS: I usually use golden/yellow potatoes - way more smooth and tasty. I soften the cream cheese & butter in the microwave and mix them with the seasonings in a small bowl, with a few drops of garlic juice and dashes of basil added in. After mashing the potatoes, I mix in the cream mixture. I serve right away or the next day - works great either way. Thank you for a great recipe!

Slow Cooker Italian Beef for Sandwiches

First, this was my first use of either a roast or a crockpot - but everything turned out excellent! I didn't have bay leaves and exchanged the onion salt for onion flakes - Also used 3 cups Swanson's Low Sodium Beef Broth instead of water & 2 italian dressing packets as suggested. Cooked on high and after a few hours it was still tough so I got worried. However, after hour 4 it was already very tender. Shredded and cooked for another hour - Came out fantastic. Boyfriend and son loved it and I'm making it again today!

Glazed Meatloaf I

I told my BF (who can cook darn well) I would make dinner tonight instead of him and started looking for a comfort food I could easily make. This one was perfect. The only changes I made were to use Lipton Onion Soup mix instead of diced onions, added Basil and doubled the sauce. Sliced and placed in the middle of a ring of creamy mashed potatos, garnished with spring veggies and I think he's in love. ^^

Fried Mozzarella Cheese Sticks

Made exactly as the recipe stated and they came out fantastic! Personally, I've noticed a major taste difference depending on the cheese sticks used so I go for a higher quality, low moisture kind that seems to work better. Even my mom ate this (she's picky!) Now I just need to find a homemade marinara sauce...

Easy Chicken Rice Casserole

Thanks for the original submission as well as the many detailed reviews! As said before, excellent base but imperative to add your own flair to make it really good. My family is big on flavor and this was my first casserole ever so here's what I did. Used 3 cups milk, totally thawed the chicken and soaked in (hot water w/ 2 chicken boullion cubes, seasoned salt, pepper and a steak dry rub I like to use). Used Cream of Mushroom and Cream of Chicken and seasoned with 1/2 tbsp Paprika, 4 tbsp Garlic Salt, 4 tbsp Pepper, 1/2 tbsp Garlic Powder, 2 tbsp Onion flakes. Placed in greased casserole dish then topped off with a bag of Mexican shreaded cheese. After 1 hr pulled it out. The middle was not done (chicken still light pink and rice crunchy). Mixed the whole thing up with an extra 1/2 milk. Then recovered and cooked the remaining 30 mins. Came out *perfect*. Everything was evenly cooked, it wasn't too watery or dry (I hate things that are *too* creamy) and there wasn't a single leftover. Next time I will stir every 30 minutes and might try not topping off with cheese til the last 30 minutes. Good Luck!

Simple Turkey Chili

Great recipes with these adjustments. Sauteeed chopped onion and minced garlic in olive oil. Then added ground turkey. Cooked with a montreal dry steak seasoning I use with turkey. Added in a little extra tomatoes, left out water & chili powder, added double the cumim, and two tablespoons of brown sugar. Simmered for 2 hrs (checking taste and adjusting seasonings slightly if needed) and served with shreded cheese and crackers for friends and my son. Was *gone* and had recipe requests afterwards. I so adore this site!

Breaded Parmesan Chicken

Great recipe. My changes were to skip the Curry/Parsley and use Italian Seasoned Bread Crumbs instead of stuffing. Coated well and they cooked nicely. Served on top of spaghetti and drizzled with a little of the spaghetti sauce. My boys loved it!

Creamy Chicken and Rice

First off, this was another good recipe as a base to add your own flair too. My alterations included using diced chicken breast, marinated heavily and pre-cooked. I had shreaded cheese instead of processed (Kraft Mexican 4 cheese). When I mixed everything but the meat/rice together I didn't think it had enough flavor at all. So I tried my (never used) Emeril's Original Essense - about 3 tbsps - and instead of layering I mixed everything up with a bag of pre-cooked brocolli. Wow - I had no need to be worried! My son and BF both thought it was excellent - the leftovers disappeared the next day. Thanks again - this site is making me look like I know how to cook!

Ommited the garlic cloves, cut back on the butter and used Italian Seasoned Bread Crumbs. Very tasty over spaghetti with sauce drizzled over it.

Easy Turkey Gravy

I followed the instructions closely with the exception of the Turkey Drippings. Mom is making the Turkey, not I, so instead I used the drippings from the Sweet Italian Turkey Sausages I baked for a stuffing recipe (Awesome Sausage, Apple and Cranberry Stuffing). It stilled turned out pretty good! I personally couldn't get it to thicken with the prescribed flour only, so added cornstarch and done! I think it tastes great - hope the family does tomorrow at dinner!

Simple, quick and easy. I followed the instructions exactly (except used Turbino sugar - no white on hand) and it was too too easy. Then to half the dough and blended in a half-cup of peanut butter and they turned out nicely as well. Thanks so much!!!
