Eggplant Parmesan

Skillet Pizza

I changed the toppings completely (this is from a website), so my rating is really for the 'crust.' It was a little tough to cut (I used wheat, low carb tortilla) and didn't contribute to the flavor, but held the toppings relatively nicely. I topped with basil pesto instead of pizza sauce, then 1 thinly sliced roma tomato, then 1/4 cup frozen spinach thawed, sprinkled with feta, then mozzarella. Next time will add black olives and maybe artichoke hearts!

Fried Artichoke Hearts

I don't keep milk on hand, so I subbed Greek yogurt with the water that comes to its top. Yum! As good as (or better than) any restaurant recipe I've had!

No Mess Squash on the Barbeque

I'd never cooked veggies on a grill before, so I was thrilled to find a highly rated recipe. I used frozen squash because that's what I had on hand. I kept it a bit more simple, but perhaps less healthy. I cooked just the veggies in the foil. I cooked according to directions. Then I added low fat feta and low fat sour cream. It was perfect! Thanks for sharing!

Meatless Mincemeat Pie

Just like I remember from my childhood! I added 1/3 cup of orange peel, brushed the crust with butter and sprinkled w/sugar. The pie was a little over-stuffed, so I might use slightly less filling next time -- eat the rest w/o crust! Thanks for this yummy, hard-to-find recipe!

Easy Apple-Carrot Coleslaw

Too easy to be so tasty & health-conscious! I made a couple substitutions due to necessity/curiosity. I only had about 1/4 cup mayo, so I added a 1/4 c thousand island dressing. It seemed a little bitter, so I squeezed/squoze in some honey -- but that was b4 it set up and flavors melded. I wondered about salting the slaw -- thought maybe it was to maintain crispness and color. I need low-sodium, so I will omit this step next time. And there WILL BE a next time! Thanks, Carolyn!

Helen's Stuffed Celery

A good recipe. I added too much Worcestershire so I tossed in some sharp shredded cheddar. For a little variety, I also added 6 oz crushed pineapple. Yum. Thanks, Helen!

Grilled Feta Tomatoes

Quick and easy and full of flavor. I added a tsp or two of greek basil dressing and some bread crumbs to absorb that. I also dabbed the tomato fruit (sans seeds) with a paper towel and mixed with rest of ingredients before stuffing the shell. 15 minutes on med heat did the trick. Thanks, Wilemon!
