Potato Leek Soup III

I altered mine slightly and it didn't need the cream (so less fat, right). I used about 8 leeks (chopped/sliced thin), about 5 cooked potatoes, and 48 oz of chicken broth. I cooked the leeks first in a little olive oil until soft then added the cooked and chopped potatoes. Once that cooked tighter for a about 5 minutes I added the chicken broth and let come to a boil. Next i used my immersion blender and pureed it. Add S/P and serve HOT. Really good and I never cooked with leek before I tried this.

Blueberry Zucchini Bread

this is super good. It actually can make 8 small loaves. If you don't want the blueberries to sink in the bottom, toss them in flour first. Oh and it's not crumbly on the top. the photo in misleading.

I really love this but add salt and pepper. I think the ratio of tortillas to eggs is off so I reduced the number. 1 egg : 1 tortilla. It works for us and then it's not like I'm eating a bunch of tortillas. We topped ours with a little cheese, salsa on the side and sour cream.

Potato Pancakes I

I didn't grate the potatoes I shredded them. It needs parsley or a tad more salt. I thought it called for way too much oil in the pan, too. Over all they were good but not fabulous.

Crab Quiche

really yummy. dont use imitation crab. it's way better with the real thing. I didn't have hot pepper sauce so i'll try it with it next time. everyone loved it. will make again.

Easy Corn and Crab Chowder

instructions are not to my liking for the one. the potatoes were raw after 10 minues of "simmering". Next time I would cook the potatoes longer in the microwave. I cant taste the crab either. It's overwhelmed by all the bacon. I recommend DRAINING the fat before you at the onions to the pan, too. I will not make this again. it's NOT "easy" as the recipe claims. Lots of steps and I cook every day. There are better ones out there and they ARE easy.

Crabmeat and Corn Soup

this is more of a chowder than a soup. I added a little old bay since I didn't have season salt and dry parsley since I didn't have fresh. really yummy. I'll thin it out next time

I do not make ice cream because it seems labor intensive BUT NOT THIS ONE. It's easy and so good. I used 2 small bags of coconut m&ms and 1 coconut twix bar.

BBQ Country Style Ribs

I used boneless country ribs and they turned out super dry. I usually cover my ribs when baking them but it didn't indicate to do so so I didn't. bad move. If you're going to make these please tightly cover with foil after the first 25 minutes of baking. you'll be glad you did.
