To Die For Blueberry Muffins

These muffins are the bomb!! Yes the batter is thick and not what you are probably used to as far as muffin batter. I had some half and half to use so I replaced the 1/3 cup milk with half and half. The muffins do not get real big if you use a regular size muffin pan. Between the tartness of the blueberries and the sweetness of the struesel topping these were superb and gone in no time. I think I'll also try using brown sugar in the topping next time although the white sugar gave the a really nice crunch. This one's a winner!!! Thanks.

Cheese Cake Cups

These really are easy and so good. I used a half cup sour cream and a little more sugar. For the crust I just used the recipe on the graham cracker crumb box (crumbs, sugar and melted butter) pressed into cupcake papers. Topped with cherry pie filling but next time I think I'll use fresh fruit. The pie filling was a little overpowing and I like the taste of the cheesecake more than the fruit topping. Awesome dessert if you want compliments.

Absolutely Fabulous Greek/House Dressing

This is a great vinaigrette. I used it on the "Mediterranean Greek Salad" from Allrecipes. See my comments for a few salad changes. For this recipe I used a slice of red onion in place of the onion powder because I had it left over from the salad. I also added one tablespoon of sugar and a half cup of parmesan cheese. I didn't have red wine vinegar so used white wine vinegar. I mixed all ingredients in my blender. Excellent dressing for the greek salad. (I also re-calculated for 10 servings)

Mediterranean Greek Salad

This was an absolutely fabulous salad. I did use Greek black olives but found them very oily as they are packed in oil/vinegar base. Calamata or regular black olives would be better. I didn't use the sun dried tomatoes at all. I used the "Absolutely Fabulous Greek/House Dressing" recipe from All Recipes for the dressing. Used a slice of red onion instead of onion powder, added a tablespoon of sugar and a half cup of parmesan cheese to the dressing recipe. Mixed in a blender. Wonderful. Perfect for summer.

Sensational Chocolate Sauce

My grandson helped me make this awesome sauce for the first time and it was delicious!! I love the way it thickens when it hits the cold ice cream. This is a recipe I'll make forever. Thanks.
