Butternut Squash Soup II

This soup was literally the best soup I have ever made from a recipe (with others' suggestions). I baked the squash as suggested by others. Once the soup was simmering, I added 4 pinches of curry powder and 2 of cayenne. I also pureed a dollop of sour cream into the soup. YUM! My husband, the meat lover, thought it was delicious and asked to have it again some time!

Joy's Prizewinning Trifle

This dish has become a tradition at our family's Christmas gatherings. No one will let me bring anything else! I make it exactly as directed, and it is a HUGE hit!

King Ranch Chicken Casserole I

This was a bit flavorless in my opinion, and the onions were still raw after baking. I would have liked them to be cooked. I would definitely say it's a very kid-friendly casserole, though, and recommended it to one of my friends. I might try to make it a bit more "adult" next time by using tortillas instead of chips, sauteeing the onions, and adding a few more seasonings.

Seven Layer Taco Dip

This was fantastic! Took it to my book club and had leftovers to eat that night. Yes, I am guilty of eating a fattening appetizer for dinner. :-) But this was so good I couldn't stop.

Coq Au Vin, My Way

To die for! I don't even like chicken very much, and this was soooo good. I could have eaten a whole bowl of the sauce and mushrooms by themselves. Will definitely make again.

Blue Bacon Stuffed Mushrooms

I made this for a shower at work. The flavor was excellent, and everyone loved them. However, I had a TON of filling left over, which may have been because I multiplied the recipe. I turned the leftover filling into a hot dip. Also, the blender didn't work for me. I ended up using a mixer to mix everything together. It's a great entertaining dish that just needed a bit of tweaking for me.

LuvAnn's Guacamole

This guacamole was excellent. I am a cook-in-training, and I had never made guac before. My boyfriend is from Texas, so I was a bit intimidated by the prospect. However, we sat and ate it ALL NIGHT LONG, making ourselves very fat in the process. :-P One thing that recipe does not say and perhaps this is a no-brainer for some: you need to seed the jalepenos and remove the membrane. We almost removed the lining of our mouths!

Quiche Supreme

Awesome, awesome, awesome! My boyfriend and coworkers thought this was the best quiche they had ever had, and this was my first attempt at a quiche! Woohoo! I did substitute cooked sausage for the ham, which everyone said was a good change. I also cooked the veggies in with the sausage to give flavor. I substituted fres mushrooms for canned because I prefer to use fresh ingredients when I can. Thanks so much for the recipe! I will definitely make this again!

Fresh Fruit Salad

I made this recipe for the ladies I work with. They enjoyed it, but I thought it was just okay. I added blackberries to it, which did help. I thought the dressing was just so-so. However, my strawberries were tart, so it could have probably benefited from more sugar to sweeten them.

Glazed Meatloaf I

This meatloaf was very good and definitely hit the spot. I took others' suggestions and made twice as much sauce. I couldn't imagine using half the sauce. Very good comfort food!

Farmer's Ranch Potatoes

My boyfriend and I both adored these potatoes! I will definitely, definitely make them again. My grocery store had a small bag of fingerling potatoes, which I used instead of red potatoes. There were small purple potatoes in the mix that gave the dish a nice, hearty color. I also added some french fried onions to the crunchy topping. It was a hit!
