Slow Cooker Pinto Bean Bonanza

Ginger-Scallion Crusted Salmon

Wow - reviewers weren't kidding, this was amazing! Complex blend of flavors and textures that complemented each other beautifully. I made this as listed except for the ponzu butter sauce, which terrified me a little with the amount of fat involved. O.o I used 1/2&1/2 instead of heavy cream, and cut the 1/2cup of cold butter to 1/4 cup. Still VERY flavorful and creamy. I also didn't have ponzu sauce so I made my own: 3 parts soy sauce, 2 parts vinegar, 1 part orange juice and 1/2 part sesame oil. Most of the work here is prep, with the actual cooking taking very little time. Make sure to get the ponzu butter to the stage where you're reducing by half before you throw the salmon in the skillet to sear, if you want things to come out done all at about the same time. =)

Grilled Chicken Salad with Seasonal Fruit

What a great salad! This is a lovely and delicious entree salad. I subbed Splenda for the sugar in the dressing and it was still wonderful. We'll definitely be having this again!

Fire Roasted Tomato and Feta Pasta with Shrimp

This was very good - light but flavorful and filling. I used more shrimp than called for (I didn't measure, just kept tossing in handfuls) and probably extra feta, too. ;) I couldn't find fire-roasted tomatoes so I just used italian-spiced diced ones... still delicious, and definitely a keeper!

Baked Scallops

These were GREAT!! I made the recipe exactly as-is and my scallops were tender and the breading was toasty and delicious. These make for a great presentation, too!

Apple Almond Crunch Salad

This is AWESOME. I grilled some chicken breasts (with a little salt, pepper, and garlic powder) and added one to each salad to make this a real entree. Amazing!

Carrot Pineapple Cake I

This was a very tasty carrot cake. Like many others, I added 1/2 teaspoon each of nutmeg and allspice, subbed 1/2 c of applesauce for 1/2 c of oil, and added 1 cup of golden raisins. I also used pecans instead of walnuts (family preference). I baked it in two 8-in rounds and stacked them before icing. The icing was the best! ;)

Pumpkin Cheesecake II

Where's the option for six stars??? This cheesecake was AWESOME. This was the first cheesecake I ever made, and I had to make it twice for back-to-back party requests. I even botched it the first time, adding pumpkin pie filling instead of pumpkin, so it was softer than it should have been. Both times the top cracked, but I used the maple pecan glaze suggested by an earlier reviewer and it covered the crack and made for a to-die-for additional flavor layer. Will DEFINITELY be making again!!

Award Winning Soft Chocolate Chip Cookies

These cookies would have been excellent but I could not get over the aftertaste of the vanilla pudding. It was too chemical-y for me; but DH didn't notice the chemical flavor at all. Too bad for him, I won't be making these again!

Peppermint Chocolate Fudge

DH loves chocolate/mint combo, so he thought these were awesome. I thought they were easy but definitely "fake" fudge. They do not have the depth and warmth of real fudge - they are kind of plastic-tasting. I will not make these again.

Panna Cotta

I made this recipe as-is, and served with mixed fruits (strawberries, raspberries, and blackberries) on top. To get them out of the glass ramekins, I dipped them into warm water for just a few seconds, ran a knife around the edge, and turned them upside down on the plate. Beautiful presentation, sure to impress your guests - it did mine! I think next time I will use lemon extract in the custard instead of the vanilla for a different flavor; I see endless flexibility with this recipe!

JENNIE-O's Best Ever Meatloaf

Fantastic! I did add extra bread crumbs (the first time; the second time I used all crushed Triscuits for the whole-grain appeal) and that helped with the texture. It would have been far too wet otherwise. I also used extra onion and extra garlic. Other than that, this was perfect - great flavor, and just as good the next day!

Roquefort Pear Salad

I used many suggestions from previous reviews and this salad was a major hit at my office party. Changes I made: I used romaine and spinach as the greens, I used Gala apples instead of pears, I omitted the avocado, I doubled the caramelized pecans and the dressing, and I added a handful of dried cranberries and pecan-crusted baked chicken. This salad was FANTASTIC. The sharp blue cheese and tangy mustard dressing were a perfect complement to the sweetness of the cranberries, pecans, and apples. The blue cheese can be overpowering, so adjust the quantity to the taste of your guests. I'll definitely be making this salad again!

Chicken Vicious

This was AWESOME. We didn't use any veggies (we were out) but I'll definitely be throwing in lots next time. We used about half the suggested chicken and had enough sauce for the rice. The only change I might make is to use just a teensy bit less sugar, it was just a smidgen too sweet. But the spice kick was amazing! This is definitely going in the favorites box.
