About this Cook
Mom of 2 boys, married 19 years, love to cook and have a huge collection of recipes! Will try new recipes and love sharing recipes with friends! I love to cook for a crowd and really enjoy when people enjoy my cooking.
My favorite things to cook
casseroles, desserts, and i have recently started trying to "master the art of french cooking" a la Julie and Julia...I love to try new things. We love tex-mex and homestyle cooking at our house but
My favorite family cooking traditions
my mother and grandmother taught me to cook from a young age...we still use my grandmother's recipes for all of our holiday dinners. My youngest son (age 8) loves to mix it up in the kitchen with me and that is a blast! He recently made an entire dessert (limeade pie) for our family dinner and was a great success.
My cooking triumphs
being able to finally master the spaghetti carbonara my dh's grandmother made. She learned from an Italian family during WWII when they were stationed overseas how to make Pasta Carbonara and it was her legacy. It only took me 18 years to be able to get the consistency right. Grandma T long ago passed on but I know she would be proud and would say I finally got it right...she told me when I was a young bride that it would take some time for me to get it right but one day I would know it by heart. She was right. I don't know how it happened but practice makes perfect and now it's second nature. Keeping family traditions alive for both sides of our family is important to me!
My cooking tragedies
One time I made my husbands entire 3 layer italian cream birthday cake without any sugar in the cake! I only realized it AFTER I had all 3 layers baked and cooled and ready to frost! There was nothing else to do except scrap it and start all over. I learned it was important to have a fully stocked pantry and to double check the recipe before I put it in the oven!

Creamy Spinach Soup
I made this today...it's delicious! I wanted a cream of spinach and chicken soup , so I used a can of cream of chicken soup in place of one of the cups of half and half. It is rich and delicious!! Next time will add some chunks of chicken for more texture. It was delicious!!

Easy Sausage Cheese Balls
These are a long time favorite and have been around for ever. This is an easy thing to put together for Christmas morning and is delicious served with apple butter on the side. One tip I've learned over the years: in order to avoid having this all over my hands I actually put all the ingredients into a gallon ziploc bag and knead it together. It takes a long time to get the ingredients incorporated and you can't knead it too long. Make sure you combine the ingredients really really well before you start rolling them into balls. They will be greasy but that holds them together. Also, I bake them on parchment paper because they will stick to your pan, even if you spray with cooking spray! But we love them and they freeze well after they are baked for breakfast on the go later. Love it!

Gooey Butter Cake III
We call this "Neiman Marcus Bars" at our house...but whatever you call it it is absolutely to DIE for!! I use duncan hines butter golden cake mix and it's buttery and smooth. Wonderfully delicious and the hit of every holiday gathering. It's simple to prepare and is usually gone before any other desserts are gone from the sweets table! My mother-in-law says it's not christmas without this dessert. 5 stars aren't enough for this one! Be prepared to share the recipe if you show up with this dessert.
