Gourmet Mushroom Risotto

Reviewed: Mar. 25, 2007
Great! With the leftovers I made Risotto al Salto. I shaped about half cup of the cold risotto and pan fry it with olive oil until it is golden brown. About 2-3 minutes per side. Then I sprinkle it with Parmesean cheese, it's delicious!

Eggplant Antipasto

Not bad, I expected more flavors, it kind of tasted like vegetables in marinara sauce. But very healthy so I will make it again.

Tastes kind of bland. I had to season like crazy and eat it with hot sauce...but I guess this is healthy

Cream Puff Cake

Reviewed: Apr. 13, 2007
Thanks for a great recipe! Very versatile and you can definitely use your imagination to create your own puff cake. I added about two tablespoons of sugar and 1/4 tsp. of salt in the pastry crust; I think it brings out the flavor of the puff pastry. For the pudding mixture, I used a can of condensed milk and omitted a cup of milk and a box of pudding mixture. And instead of the cool whip, I beated a cup of heavy whipping cream with two tablespoons of sugar and a tablespoon of bailey's. Finally I topped it off with a crust of the turtle delight magic shell by Smucker's. Next time I plan on making a banana rum puff cake..can't wait!!

Good flavors but it came out too watery...I recommend to cut down on the water just a little bit.

White Chocolate Amaretto Cake

Reviewed: Nov. 13, 2006
I used 3/4 amaretto and 1/4 water and i added about 1.5 cups of white chocolate chips.. it was sooo good! when i made the glaze i used less sugar because of the addition of white chocolate chips and i skipped the frosting. I like this better than the rum cake!

I substitute the cream cheese with low fat, sugar with splenda, non fat frozen whipped topping and milk with 1%, it still tastes awesome!!! I put them in the mini graham cracker crusts.

Frosted Banana Bars

Reviewed: Apr. 24, 2007
The reviewers that described the bars as "cake like" probably overmixed the dry ingredients. Mine came out like bars and slightly chewy, even more bar like over night. I made a mascarpone frosting with mascarpone cheese, heavy whipping cream, sugar and vanilla.

Yummy! I took the advice of another user and used the back of my chapstick to make a hole and it works perfect! You can always make the hole bigger by swirling the chapstick in circles.
