Blue Cheese and Pear Tartlets

I used this recipe for my daughters wedding reception. It was fabulous. I was concerned that the blue cheese might be overpowering so I used gorgonzola instead, much milder and the flavors blended wonderfully. There were none left!!

Sam's Famous Carrot Cake

My daughter and I tried 5 different carrot cake recipes to find one suitably delicious for a wedding cake and settled on this one. Even though this site says that the 'Best Carrot Cake Ever' is the best, this recipe won out over it as we had a family and friends "taste-off" before we made our final selection. It by far had the most flavor. Not too moist, not too crumbly. At the reception, person after person raved over the cake and asked for the recipe. We had very little left. Just enough so that we could enjoy some the next day. We did make a few minor changes. We omitted the coconut, walnuts and raisins. And increased the carrots to 3 cups.

Baked Pork Spring Rolls

These were marvelous. I did make a few changes though. I like lots of vegetables so I used a package of asian slaw and increased the seasonings accordingly to taste. I do have to admit that I like them fried better than baked. The family was divided 50/50 on this.

Asiago Dip with Crostini

I recently made this dip for my daughter's wedding reception. It was great on crostini. I didn't like it on a cracker. I am not partial to sun-dried tomatoes but this was excellent. There were no leftovers.

Seared Scallops with Tropical Salsa

I recently used this salsa recipe to serve at my daughters wedding reception. It was absolutely excellent. Several people requested the recipe. The flavors all blend together so well and it is light, fruity and spicy. I actually added an extra jalapeno for more heat.
