Mexican Meatloaf II

This was a hit with my whole family, including my extremely picky 6-year-old son! I added coriander, oregano, and garlic powder, and used chipotle cheddar tortilla chips as the binder.

Delicious Peanut Butter Cookies

It was hard to stop eating the cookies long enough to write this review! I followed the previous suggestions and used 1 C Brown Sugar, 1/3 C White Sugar, 1 C Peanut Butter, and 1/2 Tbsp Vanilla, however, I kept the shortening (used Butter Flavor Crisco). I cooked on 350 for 10 minutes, and Oh. My. Goodness. I grabbed one while still warm just to test, and it melted in my mouth. I had several more! These are delicious, moist, chewy peanut butter cookies, just what I wanted. I had previously used the Joey's recipe from this site, but this is my new favorite Peanut Butter Cookie recipe.

Daria's Slow Cooker Beef Stroganoff

The most foolproof stroganoff recipe you'll ever find! SO easy and SOOOOOOO good! Throw it in the crockpot in the morning, by the time work is done, you have a savory, tender dinner perfect for family but delicious enough for company. A favorite for sure! Thanks!

Chicken Enchiladas I

This sauce is so good, it takes a lot of willpower not to eat it before the enchiladas are assembled! Once they're done, I take extra tortillas and tear them up and sop up the leftover sauce in the skillet! :) AWESOME recipe - my kids beg for it! Thanks!

Chicken Delicious

I've been using this recipe for a couple years and am just getting around to reviewing it! Sorry! We make this at least once a month, it's a total favorite. When you're in the mood for a savory, melt in your mouth meal, this is it. It smells soooo good when you walk in the door, too! Love it! Thanks so much!

Apple Pecan Cornbread Dressing

Best stuffing ever. My family begs me to make this - my sister even threatened to boycott Thanksgiving if I didn't make it! Another year they told me it was ok if I couldn't come, but could I please drop the stuffing off anyway? :) I put pecans on only half, as some people don't care for them, and it's great either way. AWESOME recipe!

Hash Brown Casserole II

Excellent recipe! Can be done with the cubed potatoes or shreds. I don't do the topping and it's still awesome. A little tip - the more firmly you pack the casserole (smoosh it down) the quicker and more evenly it will cook - but I still have to cook it for over an hour, especially when I do it in one large dish (I often break it into two smaller and freeze one for later!) A family favorite in my house! Thanks!

Chicken Lasagna II

The measurements in this didn't seem to make sense - 1/2 cup of sauce didn't even spread to cover the bottom of a 13x9 pan, and it didn't do so on the other layers, either, nor did the cottage cheese. I used the shopping list creator from this site and got the ingredients from the recipe exactly, didn't have extra veggies on hand, and it definitely needed some. I seasoned the chicken with garlic, lawry's, onion salt & celery salt, and the dish still seemed bland. Next time I'd definitely throw in spinach, peas, corn, carrots, or all of the above. I'd also add more cream soup to make more sauce. With some tweaks, could be a very good dish.

Oven Pot Roast

I baked this covered in foil for 2 of the 3 hours, then uncovered for the last hour. It was SUPER tough, couldn't even eat most of it (and I did turn it so it would retain gravy evenly). Would definitely recommend keeping covered through the whole cooking time. I will say the gravy it made was awesome - just eating that on mashed potatoes and veggies almost made it worthwhile!

Easy Honey Mustard Mozzarella Chicken

The flavor combination in this didn't wow me, to be honest. The lemon pepper with the honey and mustard and swiss cheese just didn't taste quite right. But the sauces and cheese made the chicken nice and moist, and it was eaten and enjoyed without complaint by the whole family.

Aunt Teen's Creamy Chocolate Fudge

This fudge was good, but not as good as other fudge I've had (Mackinac Island, Wisconsin Dells). It wasn't as creamy/rich/smooth as I had hoped. Still had a nice chocolate flavor and was dense and easy to bite into. I received a lot of compliments from my guests, and would make again.

Pumpkin Cheesecake Bars

These didn't taste Cheesecake-y enough for me - REALLY strong pumpkin flavor. My guests didn't even know they were supposed to be cheesecake. Next time I'd up the cream cheese and cut back the canned pumpkin. Also the texture was not as firm as cheesecake. They didn't taste bad, just not as expected.

Pumpkin Drop Cookies

AWESOME!!!! I accidentally grabbed my 1/2 cup measure instead of 1 cup, so I did 1 1/2 cups sugar and 3 cups flour, but they still turned out a-mazing! Don't skip the icing though, it really makes the cookie! I'll be making this every fall from now on for sure!

Spinach Cheese Manicotti

This was excellent. Very easy once you get the hang of it; I've made it several times. Be sure you have enough sauce to cover the manicotti noodles and that your oven is hot enough (made it in two different ovens; one was not hot enough and the noodles took FOREVER to cook!) I used fresh basil instead of parsley, and canned diced tomatoes instead of prepared sauce. I also used refrigerated minced garlic instead of powder. I get rave reviews for this one whenever I make it - and everyone thinks it's such a difficult dish! Only you'll know the secret...

Chicken Murphy II

I LOVED this dish!! I made a few changes (no peppers or jalapenos, used tomatoes instead, and added some italian seasoning, skipped the cornstarch part because my sauce was thick enough already) I wasn't a fan of the italian sausage we got, so I ate mine without - still fantastic! Beware, however - this is not a "fix it & forget it" recipe - you're basically working on it right up until it's ready. If you're making it for company, I'd make the sauce a little while ahead and let it simmer or pan-cook it to reheat, and make the pasta right before serving. Excellent!!!
