Cornish Game Hens with Rice Stuffing

I used this recipe for my 2 year annniversary. As a beginning cook I found this recipe very easy to follow, and very delicious. My husband absolutely loved the cornish hens. The only thing that I changed (for time constraints) was the wild rice. I used the Uncle Bens Microwave Rice to start the cooking on the rice and then I added butter and cooked it on the stove top to get the long grains softer. A tip that I would give anyone that uses this recipe is to make sure the rice is cooked thoroughly before you stuff the hens, and make sure you do leave the skin on while baking; otherwise your hens will get dry. Overall I would say that this recipe was very good. A+

Golden Rum Cake

This is FABULOUS! I have made this recipe several times EVERY YEAR! I recommend experimenting with the jello pudding. I use banana cream, and it's divine! It tastes just like the Tortuga Rum Cakes you pay $15+ for... This recipe is a WINNER in my book!

Busy Day Chicken

Cantina Pinto Beans

Delicious! I added a can of Rotel and green bell pepper. I also soaked the beans for about 6 hours before cooking them on medium. I waited to add salt until after the beans had cooked. I'm definitely going to have to make this again in the future!

Cream Cheese Penguins

These are sooooo cute! They took forever to make!!! I don't have any children (8-12), but this would be a great hands-on project for a holiday themed party. I made sure that I piped in the cream cheese mixture using a bag. I couldn't find the pimentos for the scarves, but they were still cute.

Indiana Potato Salad

I made a big mistake from the beginning of this recipe, but it didn't hurt it at all! I didn't have the recipe in front of me, so I boiled my potatoes for about 35-45 minutes. When I pulled out the recipe, I realized that I made a mistake. I peeled all of the potatoes and cut them into large chunks. Now for the best part... Instead of baking the potato salad, I ended up melting the cheese and the mayo in the microwave together. After that, I folded the cheese mixture, crumbled bacon, and diced onion into the potatoes separately. I told my friends to be honest, and they told me that they loved this recipe! They liked that this wasn't a typical "mustardy" or "mayo" saturated dish. The cheese and bacon really compliment each other.

Red and Green Christmas Jalapeno Jelly

This was deeelicious! I followed the recipe exactly down to the minute, and it worked perfectly. I followed someone else's suggestion about doing one batch at a time. The one thing I would change for next time is use more jalapeno seeds because I love the spice. This tastes wonderful as a sweet pepper jelly. This is going to be a wonderful gift to my friends! (Note: Don't be afraid of the apple cider vinegar. I was hesitant that it would taste like vinegar, and it didn't.)

Fresh Southern Peach Cobbler

This was great! I used frozen peaches and did not have a problem. Next time I would like to integrate rum for a new flavor ~ maybe Southern Comfort! But this recipe is good the way it is made. One suggestion would be to not make the batter too thick on top because it will not be crisp and will take longer to bake.

Grandma's Green Bean Casserole

This casserole was awesome! The only modifications that I made were to lighten it up. My husband and I are on weight watchers so I needed to bring something to Thanksgiving dinner that wasn't going to completely kill our diets. This is what I changed: I used light butter, splenda, FF sour cream, fresh green beans,reduced fat round crackers, and the best part: light velveeta for the topping instead of the shredded cheddar cheese. (light or fat free shredded cheese will harden and not give a good cheesy topping) Everyone enjoyed this recipe-even the non dieters!

Double Chocolate Brownie Cake

This recipe is so decadent and moist! This is definitely a keeper. Here are the substitutions that I made that were still good ~ instead of sour cream I used fat free plain yogurt; instead of oil I used applesauce, and I used Sugar Free/Fat Free Instant Choc. Pudding Mix. The cake was still gooey and chocolaty ~ which is what my guests loved. On the cooking time I only needed to cook mine for 45 minutes. (NOTE--I couldn't find 3.9 ounce package of instant chocolate pudding mix so I used one large and one small box.) For the topping I took the advice of another person and used the recipe for “Satiny Chocolate Glaze”. This was also good – but if I do that another time I would probably use more white chocolate than it called for and less butter. After everything cooled I served this with fresh strawberries and a scoop of vanilla ice cream. Enjoy!

Cool Cucumber Salsa

This is an awesome salsa. I always make double because it's perfect. I eat this salsa with chips, nachos, or on top of tacos/burritos! It reminds me of the salsa I had at The Wet Lizard in Belize, C.A.

This chili was wonderful! We followed the instructions exactly, and it was a hit. The only change that I will make next time will be to add more liquid. It was very thick and hearty. :) Thank you for sharing!

Peppermint Brittle

This brittle was okay. The peppermint started to "sweat" after about a day or so...Since this was my first shot at peppermint brittle, I'm not sure if that's normal or not. I just don't like sweaty food. LOL. The first day it was good though...
