Mushroom Sauce

I went searching for a sauteed mushroom recipe, and this is the one I decided to use. We cooked steaks and chicken on the grill, and it all went perfectly together. The shrooms were absolutely awesome. Will definitely use again and again. Next time I may use a little less broth because there was so much broth left over and not many shrooms.

Sensational Sirloin Kabobs

My stomach is soooo full. I just got finished trying these kabobs for the first time, and they were WONDERFUL! I marinated the meat, onions, and bell peppers overnight, then this morning I added the mushrooms and pineapple. I wrapped the meat in bacon before skewering everything, and they turned out perfect. I wouldn't change a thing. I will definitely use this recipe again...soon.

Ranch Chicken Tacos

Really good. I found myself adding extra sauce to my tacos because the chicken was kind of dry. Otherwise, it was a nice change of pace. Can't wait to make taco salad from the leftovers.

Chicken a la Good

Chicken a la AWESOME! Oh man, I made myself sick going back for seconds. I made it exactly as the recipe reads, except I marinated the chicken in Italian dressing for a few hours. In addition, I made the cream sauce in the Quick Chicken Cordon Bleu recipe. I thought it might be dry otherwise. Really really good recipe. I will definitely make again.

Quick Chicken Cordon Bleu

NOTE: I ONLY MADE THE SAUCE IN THIS RECIPE. That being said, it was excellent! I used whipping cream instead of milk, and I think that made a big difference. I'm sorry, normally I won't review a recipe if I make changes to it, but this sauce is really really good, and I wanted to be helpful to others who might try it. By the way, I used the sauce with the Chicken a la Good recipe, which was awesome too.

Chicken Chile Spaghetti

Prep time was a lot more than 15 minutes. That would have gotten it four stars, but it was soooooo good. Made exactly by the recipe. Even topped with shredded cheese. I will definitely use this recipe again, only next time I'll buy the already chopped veggies, and will probably use less cheese.

Beer Butt Rosemary Chicken

Great recipe, and so moist! I just wanted to add one suggestion. I mixed my seasonings with a little bit of olive oil in a bowl and painted the whole chicken with a bbq brush. Much easier than trying to sprinkle all over a standing up chicken. I actually used dried rosemary, salt and garlic, but it was terrific. I'll start making this all the time, because you can change up the spices to suit your taste. Maybe even add some carrots to the broth.

Good queso, but it may as well have been the basic Rotel variety. Processed cheese is processed cheese, no matter how you dip it.

Scalloped Cabbage with Ham and Cheese

Oh my gosh! Soooo rich! I didn't even like cabbage until I tried this dish. Made it exactly like the recipe, which I don't usually do, and it was perfect.

Pork Chop and Potato Casserole

This was really good with a little tweaking. I normally don't review something I change up, but this turned out well, and I wanted to make these suggestions: I tossed the sliced potatoes with salt, pepper, mushroom soup, onions, cheese, and a few tablespoons of melted bacon grease (bacon grease may just be what made it so good). Skipped the milk. Just wasn't necessary. I placed the chops in a casserole dish and dumped the potato mixture on top. Covered with foil, and cooked in the oven for about an hour, until the potatoes were tender.

Mexican Lasagna Chip Dip

Pretty good dip. Needs more cream cheese and less meat and beans though. That's just me, I like gooey cheesy. I liked it for a change of pace from regular cheese dip. It made enough I was able to make it on two different days. The first day I layered it as directed. The next day, I spread the cream cheese in a pie plate, then the meat and beans mixture, then cheese. I really liked it best that way. It just went together more smoothly.

Black Forest Cheesecakes

I didn't realize how tart cherry pie filling is. I wish I had sweetened it before putting it on top of the cheesecakes. Other than that, they were really good. Next time, I may just top them with real whipped cream and a Maraschino cherry.

Booger Cookies

Had to amend from my original 3 stars. My son took these to school in his lunch one day, and the boy sitting next to him asked that I make them again so he could have more. Good reviews from the kids, I just wasn't big on the powdered sugar frosting. May use frosting in a tube next time or none at all.

Fiesta Fudge Cookies

These super fudgie cookies are pretty good--if you eat them within about 24 hours. So rich they'll make you pucker. I made them exactly as written, except I cooked them for an extra minute. They don't look like they've cooked at all when you look at them. Just trust that they're done. I touched the tip of the kiss and lightly pushed it down rather than tapping the cookie. They really need to be eaten in about a day or so, because they get dry pretty fast. Oh, and here's a little tip. Don't refrigerate the dough between batches. It will dry up and not make good balls.

Boston Cream Pie Minis

These were so good and easy to make. The only thing I'll do different next time is the chocolate on top. Maybe condensed milk and chocolate chips would be better. The chocolate got hard in the fridge and it made it hard to bite them. Overall the taste was outstanding.

Chicken Stuffed Peppers with Enchilada Sauce

Outstanding! I never in a million years would have thought I could make authentic Mexican, but it turned out really good. I was reluctant to add the chocolate, so I tried it without first. Let me tell you, the chocolate makes the sauce. It does not taste like chocolate, just authentic mole sauce. I will use this recipe again. The flavors blended beautifully with spanish rice and cheese dip and chips.

Ham and Chicken Lasagna

This lasagna was okay. There are some things I will do differently next time--if I make it again. I wish it had been creamier. It had a good flavor, but I guess I was expecting sloppy, rich lasagna. Overall, it was good though. Maybe next time I will use colby jack instead of swiss.

Sweet, Sticky and Spicy Chicken

The first time I made this, I dredged--well, bathed--the chicken pieces in flour, and the sauce was a gooey, stickey mess. Very unattractive too. The flavor, however, was great. I gave it another try, only this time, I sprinkled a little flour over the chicken while it was cooking. It came out perfect. Will definitely make again.

Chocolate Banana Bread Pudding

Let me start by saying I don't like bananas and I've never made bread pudding. In fact, the only bread pudding I've ever eaten is at Oaklawn Race Track in Hot Springs, Arkansas, which is famous for its bread pudding. The bar was set very high, needless to say.... This bread pudding turned out perfect. I made it exactly as written, except--as others suggested--I used 1/2 cup chocolate chips. It's February, and I'm already planning my Thanksgiving dinner around it. I also topped it with Creme Anglais, which was the perfect touch. UPDATE: Once I used the whole amount of chocolate chips and it ruined it. DON'T FORGET TO HALF THE CHOCOLATE CHIPS.

Chili Dip

I probably would have given this 5 stars if I had used home made chili. I just don't care much for canned chili. The concept sounds really good though. I love cream cheese dips. I will give it one more try this winter when I make chili from scratch.
