Chocolate Hazelnut Frosting

What a great idea to make regular chocolate frosting taste like it came right out of a bakery. I love chocolate frosting, but I don't want to take the time to make it from scratch, and canned chocolate frosting just isn't good. Thanks for the idea! By the way, don't add any water. I added just a tiny bit, thinking it would make it more spreadable. It did, but it was a little gooey. Don't change a thing in the recipe.

Cheese Blintzes

I tried these on the spur of the moment about 9:00 one night because I needed to use up a little bit of leftover cream cheese. I made about a dozen of them. I can see how they could get a little time consuming if you make a whole loaf of bread. Nonetheless, they were AWESOME! I found myself eating a dozen little cheese blintzes at 10 p.m. I'll be making these again soon. And maybe next time I'll share them with my family.

Pineapple Upside-Down Cake V

Maybe I shouldn't judge because I'm just not a big fan of pineapple upside down cake, but I'm gonna anyway...It was just okay. The cake part needed more. It was a bit dry and flavorless. The pineapple/brown sugar/coconut was a good combination, and I really liked that part, but the rest of the cake was just blah. Maybe some crushed pineapple in the cake would have made it more moist.

Award Winning Peaches and Cream Pie

I tried this pie for my husband only, because I don't like peaches. But it turned out so pretty I had to try it. I really liked it. Of course, all the real whipped cream slathered all over the pie may have drowned out the flavor of the peaches! A very different kind of pie. I will make it next time with fresh peaches.

Mediterranean Stuffed Chicken

I give this 3 1/2 stars. Not terrible, by any means, but I just wasn't big on the combination of cream cheese and feta. I love both, and I really thought it sounded awesome, gooey and cheesy. It just wasn't. I still liked it enough to eat leftovers the next day, but I probably won't make it again.

Barbecue Green Beans

Way too sweet. Overall not a bad flavor, but I ended up having to add both salt and soy sauce to cut the sugar. I doubt I'll make these again.

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

Fantastic! I was scared of the ginger since I've never cooked with it before, but it was mild and didn't overpower the sauce. It was too hot outside to cook on the grill the day I fixed this, but the pork fell apart in the oven and basted in the sauce and the juice from the pork. Really really good. Think I'll try the leftover sauce on grilled chicken!

Chocolate-Peanut Butter Mallow Bars

OMG, are you kidding me with these things? So rich and gooey. A big hit with my whole family. That being said, these were a bit messy to prepare. The peanut butter and milk mixture didn't just spread onto the hot cake. It would have destroyed the cake, so I dolloped on the PB, then I dolloped on the marshmallow creme--as much as marshmallow creme can be dolloped. It was a gooey mess. I then topped it with the remaining batter and sprinkled with semi-sweet chocolate chips. I thought that sounded better than peanuts. I have a feeling my boys will be requesting these again, but next time, I think I'll leave out the peanut butter. It canceled out the marshmallow taste. Might be good with caramel instead.

Best Big, Fat, Chewy Chocolate Chip Cookie

Can't decide between three and four stars. Four, because the cookies had a good flavor (not five because they taste like every other chocolate chip cookie I've ever made). Three, because they stuck really bad on my seasoned baking stone that nothing ever sticks to, ever. They turned out to be a pain . I could have made cookies from packaged dough and my family would have been just as happy.

Summer Squash Chicken Alfredo

This was pretty good. Not a combination I had ever thought of, but it totally worked. I got carried away and ended up with too much zucchini and squash, not to mention the fresh mushrooms I added, so I ended up using a whole box of bowtie pasta and a whole jar of alfredo. I also used canned tomatoes instead of sundried. It made a ton.

Emily's Easy Sausage and Spicy Tomato Dip

To heck with football season. If I wouldn't drop dead from arteries clogged with cream cheese, I'd eat this dip every day. I like it with Fritos or Wavy Lays. One time I even stuffed jalapenos with it. I like it with extra tomatoes too. Best dip ever. Beats regular cheese dip anytime!

Salsa Biscuit Chicken

Totally kid friendly! My picky 5-year old ate two. I made it without onions, because my family doesn't like them, but I will absolutely make this again. Maybe with ground beef or crescent rolls, maybe a little taco seasoning. I don't have enough biscuits for the rest of the mixture, but I'll use what's left with tortillas and maybe a little sour cream.

Ham Salad Spread

This was okay. Actually, I wasn't crazy about it. Maybe it was the texture of the ham. I gave it three stars because my husband liked it. I doubt I'll make it again. There's a special ham salad I'm looking for. I'll have to keep looking.

Orange Teriyaki Chicken

This was pretty good as far as chicken goes. A little too orangey for my taste, though. I might try it again, but I would use less orange juice. My kids hated it, and my husband said it was just edible.

Country Fried Squash

Excellent! For my first time cooking squash, that is. I spent the first 36 years of my life not eating squash, and finally my husband talked me into trying it. I love it! And this recipe was perfect. I'll use it every time I fry squash. Oh, one thing though. It needed more salt. Sprinkle a little kosher salt on each one after they come out of the grease. Kosher salt makes them PERFECTO!

Pistachio Cake II

This cake was really good. It was at its best on about the fourth day. I made it exactly as written except I used Cool Whip because I couldn't find whipped topping mix. I'll continue to use Cool Whip, because it was perfect that way. I also threw some chopped marachino cherries into the frosting, which was an awesome touch. I may make the cake richer next time by adding another box of pudding, and maybe even some cream cheese in the frosting. This really was a great recipe.

Chicken Chile Spaghetti

Prep time was a lot more than 15 minutes. That would have gotten it four stars, but it was soooooo good. Made exactly by the recipe. Even topped with shredded cheese. I will definitely use this recipe again, only next time I'll buy the already chopped veggies, and will probably use less cheese.

Over the Fire Scalloped Potatoes

Superb! I wasn't cooking on the grill the night I craved this recipe, so I cooked the potatoes in a baking dish. It worked out perfectly. The only change I made was that I didn't use mushrooms, but I did sprinkle shredded cheese on top near the end of cooking. I'll use this recipe again for sure.

Enchilada Casserole III

This wasn't near as good as I expected it to be. First of all, a couple of shortcuts could have been made--instead of substituting tomato paste and water in the enchilada mix, tomato sauce would have been fine. For that matter, canned enchilada sauce would have been fine. Dipping the tortillas was a bit messy too. By the second layer, I just poured the enchilada sauce on top. If I were to make these again, I would double the enchilada sauce, because the casserole was a little drier than I would have liked. Otherwise, it was good topped with lettuce, tomatoes, and sour cream. My picky boys liked it.
