Fish Fillets Italiano

A great recipe for any time of year! I made this and forgot the white wine, and added some general Italian seasoning and everyone -- including my husband who doesn't like seafood -- enjoyed it. I served it over couscous which helped sop up the juices!

Cajun Appetizer Meatballs

A great recipe for a party! My sauce turned out a bit more on the BBQ side, but that's because I worried about them drying out in my crock pot and overcompensated by putting in a bit too much BBQ sauce. I did follow the advice of other reviewers and really put in a larger amount of cajun seasoning in the meatball mixture to make sure you could taste the difference between them and regular meatballs. I also used ground Turkey instead of beef since I had a guest that didn't eat beef dining with me. But they were good enough that she had to ask me three times if they were really made from Turkey! Will make when I have a larger party again!

Super Moussaka

Very nice dish. I didn't realize I had no Basil, so I used Oregano instead. Also, I used Soy Milk rather than Cow's Milk (again, because I thought I had milk). I added some sauted Red Bell Pepper, sauted Onion and thinly Sliced Potatoes below the Eggplant layer (as in another Moussaka). It took a bit of time to prepare, but it was pretty good. I think next time I'll add more spices to jazz it up a bit more. The major "complaint" I have is that the spices are a bit low-key for a dish that has many components (especially the bulgur!) which soak up flavor so readily.

Indian Chicken Curry I

I used cut up chicken tenders and used some non-fat yogurt instead of the coconut milk, and it came out great! I also cut up two small red potatoes and those added some variety to the chicken and onion.
