Magic Peanut Butter Middles

With 1 T + 1t milk added, I give it 5 stars for flavor. Everyone loved them. Kind of a long process to make. I recommend making the peanut butter balls first, and let them chill while mixing, scooping, and flattening the dough. Then wrap dough around peanut butter filling. Yum.

Double Chocolate Mint Cookies

I added mini chocolate chips, 4 T flour so they stay fluffy, 2 t peppermint, and rolled the dough in crushed candycanes- taste GREAT, look pretty, and are easy to make!

Swiss Chicken Casserole I

This was a hit with my family. It can be made in a crock pot, too! I combined the milk and soup in the bottom of a fairly large, oval crock pot. Set chicken on top, then the cheese, ham, stuffing mix and butter. Cook on low for about 5-6 hours, or on high for 2-3 hours.

Cherry Pork Chops

I made this when we were stuck inside from an ice storm, and I had low expectations- we were pleasantly surprised! I followed the directions exactly, and the pork was tender and moist. I will try it again with apple pie filling and allspice.

Banana Sour Cream Bread

This banana bread is my family's favorite! I sometimes make it with a topping using: 1/2 c brown sugar, 1/2 c flour, 2-3 T butter, and 1 t cinnamon. Just combine and lightly press into batter before baking.

Orzo with Parmesan and Basil

My family has had this at least 10 times in the last year. We do add fresh sauteed mushroons, and we find that we always have to add quite a bit more chicken broth than the recipe calls for. My kids and my husband love it.

Broccoli Rice Casserole

I followed Kristina's advice- Cut the velveeta into chunks and place them in a casserole dish. Pour in the two cans of soup and 3/4 c. milk. Put the casserole dish in the oven at 350 and let the cheese melt. When cheese is melted, remove from oven, well and add the rice, broccoli, and chopped onion. I omitted the celery. I cooked it for about 30 minutes on 350.

Mendi's Favorite Orzo

This is a great side dish! I did have to cook my orzo for 10 minutes, as the author notes in a comment. We have also added some cooked chicken breast to it, making it into a great one dish meal!
