Icing for Sour Cream Cookies

Reviewed: Mar. 13, 2009
This is so delicious! I needed something quick to top some strudel and this worked great. I didn't have a problem with it hardening, but I used a little less sugar than it called for and a little more vanilla. Now I want to try it on the cookies! :)

Harvest Potato Casserole

Reviewed: Apr. 7, 2009
This was delicious! Pimientos kinda freak me out, so I used bacon. I fried some turkey bacon and made gravy from the left over grease. I only used half of the condensed soup and put in the gravy and crumpled up turkey bacon. I also used Total cereal, since that was all I had. :) It was great!

Passover Rolls I

Reviewed: Apr. 10, 2009
I made these for our passover service and EVERYONE asked me for the recipe! They were great! I did add about 1/2 cup of honey to the water and oil while it was boiling. I think it gave it a litte better taste. I will def make these again this week!

Quick and Easy Brownies

Reviewed: May 1, 2009
These were pretty good! Next time I will add some more cocoa or some semi sweet chips to help it taste a little more chocolatey. I used the amount of flour is asked for, but I added a chocolate pudding cup and I think that made them moist. I also added 1 tbsp of instant coffee... so yummy! :)

Deviled Eggs

Reviewed: Jun. 26, 2009
This recipe is delicious! I've always loved my mother's deviled eggs and I was afraid to even try to make some that would compare to her's. This is it! WATCH THE SALT CONTENT... the second time I made them I added a little too much salt. 1/8 tsp is plenty. Also I let them sit and then poured cold ice water over them and let them sit for 15 min as per other reviews. They peeled nicely. I hit them on the counter and then roll back and forth until the entire egg shell is broken up. Kind of like how you get a lemon or lime ready to squeeze. I've made them twice... the first time I doubled the recipe and took them to a potluck. They were gone in minutes. Quick, easy and delicious!

No Bake Cookies III

Reviewed: Jul. 31, 2009
The secret is to boil the mixture for 4-6 min... the longer you boil the more the sugar carmelizes and the quicker the cookies will set up once you remove them from the heat. If they look a little watery (like my first batch did) then just let the mixture set for a few min before spooning them out on the wax paper. These are so delicious!!! I've made them several times. With and without peanut butter... you can add almost anything to these cookies. I've even made coffee almond ones! I also use dark chocolate cocoa and it makes them even more decadent. I will continue to make these for a loooong time!

Skillet Chicken Cacciatore

Reviewed: Dec. 29, 2009
This was very tasty! I would def season the chicken with salt and pepper before cooking. I used fresh sliced mushrooms instead of ones in a jar and they were so good! The thigh meat was tender too... My husband loved it! Will def make this again! Probably with more veggies and fresh herbs. Thanks! :)

Mini Pineapple Upside-Down Cakes

Reviewed: Jan. 5, 2010
These were great! I used pineapple supreme cake mix, but kept everything as per the recipe. Used my kitchen shears to trim the pineapple rings and put the cherry in before baking. They came out awesome! I made them in place of regular cupcakes at my sons bday party and they went fast! Will definitely make these again! YUM.

Apricot Glazed Carrots

Reviewed: Jan. 7, 2010
This was ok. It was a little too much nutmeg and I used the orange marmalade instead of apricot, which I won't do next time. My little boy did eat the carrots and he normally doesn't so that was good! :)

Salmon Cakes I

Reviewed: Jan. 7, 2010
These were yummy!! :) I had a bunch of potatoes that needed to be used and cans of salmon, so this was PERFECT. A nice change from regular salmon patties too... I did use green onions and only three potatoes.

Black-Eyed Pea Gumbo

Reviewed: Jan. 7, 2010
I put this in a crockpot instead of over the stove. I drained the black eyed peas before putting them in the crockpot cause the liquid doesn't evaporate the same as stovetop. I also sauteed the onion and celery with the olive oil and some italian turkey sausage and put the meat and drippings in the crockpot. Put the rice in uncooked and let everything cook on high for four hours. My mom made some homemade cornbread to go with it. It turned out great! Everyone loved it!!

Chicken Oreganato

Reviewed: Jan. 13, 2010
This was pretty good! I used vegetable oil cause I was out of olive oil, a little oregano, italian seasoning, and just a dash of garlic. It took a little longer to cook though... I also pulled the skin off cause i'm watching my calories. I reduced the recipe cause we only used three chicken thighs... it was really yummy!

Banana Nut Muffins

Reviewed: Jan. 13, 2010
Feel free to add some extra bananas and other fresh fruit... I ran out of bananas on the second batch so I added some strawberries and a couple tablespoons of orange marmalade. They were yummy! You could also use half whole wheat flour and half regular all purpose for a more earthy taste. If your watching what you eat these are great! Just don't expect decadent... they are just sweet enough and healthier than regular muffins. Super easy and I will definitely make these again! THankS!

Chocolate Chip Peanut Butter Blondies

Reviewed: Jan. 18, 2010
No parchment paper or jellyroll pan? I just used my 9x13 cake pan and then sprayed it with cooking spray and floured the bottom and sides really well. They were so easy to remove once they cooled. And yummy! I used 1 cup all purpose and 1 cup whole wheat flour too. They were great and a delicious alternative to chocolate brownies.

Cowboy Oatmeal Cookies

Reviewed: Feb. 23, 2010
Perfect recipe! So fattening, but delicious! :) I used raisins instead of the butterscoth and they turned out perfect. Actually made about 4 dozen good sized cookes. I also used butter instead of margarine. Yummy!
