Momma's Tuna Casserole

I created this recipe after reading through dozens of casserole recipes! There are sooooo many out there. But I think this tuna dish incoroporates all the best parts of what a comforting casserole is! :) You can sub different to make it quicker to prepare. The cheese sauce is what takes the longest, but you could use a prepared cheese sauce instead. This is way better than any tuna helper! Give it a try! :)

Shoepeg Corn Casserole

This was yummy! I put in some shredded chicken right before I baked it. Perfect one dish meal! Just had some bread on the side... the only thing I might change next time is to use cream of mushroom instead of cream of celery. I'm just not a big fan of celery. :) There was plenty for our family of four and we even had leftovers... and they were better the next day! Will def make this again.

Pistachio Eclair Dessert

I LOVE LOVE LOVE pistachio pudding, so this was awesome! I've made it twice... so easy and so yummy. You could make it with any flavor of pudding and it will be great!

Chocolate Mousse Cake IV

Even though the mousse didn't set up very well, this cake was still delicious! I used vanilla pudding mix instead of choc, and it was SO yummy! I'm not sure what I did wrong, but i'm gonna read through all the other reviews and try this again soon.

Espresso Sugar Cream Pie

This was yummy! I didn't have espresso powder, so I used 1/2 tbsp instant coffee and 1/2 tbsp cappuccino powder. I also used some dark choc cocoa and cream to make some choc whipped cream and it was great! So easy! Everyone loved it! Will definitely make this again. :)

Cowboy Oatmeal Cookies

Perfect recipe! So fattening, but delicious! :) I used raisins instead of the butterscoth and they turned out perfect. Actually made about 4 dozen good sized cookes. I also used butter instead of margarine. Yummy!

Chocolate Chip Peanut Butter Blondies

No parchment paper or jellyroll pan? I just used my 9x13 cake pan and then sprayed it with cooking spray and floured the bottom and sides really well. They were so easy to remove once they cooled. And yummy! I used 1 cup all purpose and 1 cup whole wheat flour too. They were great and a delicious alternative to chocolate brownies.

Delicious Salmon Pasta Salad

YUM. This is so tasty... I was out of olive oil so I had to used vegetable oil and minced garlic. I also used steamed zucchini and yellow squash instead of carrots and broccoli. It was so good! Thanks!

Banana Nut Muffins

Feel free to add some extra bananas and other fresh fruit... I ran out of bananas on the second batch so I added some strawberries and a couple tablespoons of orange marmalade. They were yummy! You could also use half whole wheat flour and half regular all purpose for a more earthy taste. If your watching what you eat these are great! Just don't expect decadent... they are just sweet enough and healthier than regular muffins. Super easy and I will definitely make these again! THankS!

Chicken Oreganato

This was pretty good! I used vegetable oil cause I was out of olive oil, a little oregano, italian seasoning, and just a dash of garlic. It took a little longer to cook though... I also pulled the skin off cause i'm watching my calories. I reduced the recipe cause we only used three chicken thighs... it was really yummy!

Black-Eyed Pea Gumbo

I put this in a crockpot instead of over the stove. I drained the black eyed peas before putting them in the crockpot cause the liquid doesn't evaporate the same as stovetop. I also sauteed the onion and celery with the olive oil and some italian turkey sausage and put the meat and drippings in the crockpot. Put the rice in uncooked and let everything cook on high for four hours. My mom made some homemade cornbread to go with it. It turned out great! Everyone loved it!!

Salmon Cakes I

These were yummy!! :) I had a bunch of potatoes that needed to be used and cans of salmon, so this was PERFECT. A nice change from regular salmon patties too... I did use green onions and only three potatoes.

Apricot Glazed Carrots

This was ok. It was a little too much nutmeg and I used the orange marmalade instead of apricot, which I won't do next time. My little boy did eat the carrots and he normally doesn't so that was good! :)

Mini Pineapple Upside-Down Cakes

These were great! I used pineapple supreme cake mix, but kept everything as per the recipe. Used my kitchen shears to trim the pineapple rings and put the cherry in before baking. They came out awesome! I made them in place of regular cupcakes at my sons bday party and they went fast! Will definitely make these again! YUM.

Skillet Chicken Cacciatore

This was very tasty! I would def season the chicken with salt and pepper before cooking. I used fresh sliced mushrooms instead of ones in a jar and they were so good! The thigh meat was tender too... My husband loved it! Will def make this again! Probably with more veggies and fresh herbs. Thanks! :)

No Bake Cookies III

The secret is to boil the mixture for 4-6 min... the longer you boil the more the sugar carmelizes and the quicker the cookies will set up once you remove them from the heat. If they look a little watery (like my first batch did) then just let the mixture set for a few min before spooning them out on the wax paper. These are so delicious!!! I've made them several times. With and without peanut butter... you can add almost anything to these cookies. I've even made coffee almond ones! I also use dark chocolate cocoa and it makes them even more decadent. I will continue to make these for a loooong time!
