Cheesy Chive Crisps

I made these today and they turned out great! I didn't have any trouble shaping them into the logs and then I wrapped them with plastic wrap and left in the fridge for a few hours until ready to bake them. No problems cutting them into "discs" either when using a large sharp knife. I had 4 "logs" of the mixture but didn't want to bake all of them so I put 2 of the logs into the freezer. I am hoping that will turn out when I bake them next week! Overall, these are so yummy and the crisp from the rice krispies is a nice touch (how can they not be with that ingredient list! :)

Spaghetti Squash I

This was an easy, healthy and filling dinner! I omitted the black olives and used up some zucchini that I had on hand. The feta is what made the dish even better. I have only prepared spaghetti squash in a more Italian-style (e.g. with marinara or with chicken parm) but this was delicious and will be made again.

Real Hummus

This was my first attempt at homemade hummus and it turned out great! I used some of the suggestions in the comments (only used 1/2 tsp salt), used more lemon (I LOVE lemon) probably just shy of two lemons, I added a bit more garlic and a pinch of cayenne. I can't wait to eat it for dinner tonight and it makes such a great healthy snack during the week! Thanks for sharing the recipe and to everyone else for their suggestions. I will def be making this again.

Rosemary Roasted Pork Tenderloin

This turned out wonderfully! I will keep this recipe and share it with friends/family. Like many people suggested, I doubled the marinade. My grocery store was out of fresh rosemary but it turned out great with dried. Also, I used apple cider. The pork smells delicious while it's baking!

Baked Lemon Chicken

This was REALLY easy and really good. Like others, I used olive oil (and a little butter) and juice of 2 lemons. The chicken had a distinct lemony flavor - which I love. I will definitely make this again.

Watermelon Vodka Slush

This recipie made a lot more than just 4 martini glass fulls for me. I used 3/4 cup vodka but it still tastes strong (and I'm definitely not a 'weak drink' kinda' gal!) Also - I was impatient and only let the watermelon puree stay in the freezer for an hour - letting this freeze seems like a crucial step (esp to achieve the slushy consistency that will make this drink awesome.) Let me take another sip.... ahhh... maybe a little more melon liquour? The triple sec suggestion sounds like a good one. Maybe a tad more simple syrup? Then again maybe it's my watermelon that is not the sweetest? (Now that I'm buzzed and can't stop adding my opinions... I think it's best I leave! I froze the leftover concoction and will pop it in the blender again tomorrow and see how it fares when it's in a slushy state.) Happy sipping! :)

Light and Fluffy Spinach Quiche

This was excellent! My husband ate 1/2 of the quiche in one sitting! I followed the recipe exactly. It turned out so well and is a delicious light quiche.. (of course the next day after all that cheese and mayo and scrumptious crust we had to run for an hour!) Will definitely make this again and share this recipe with friends.

Butternut Squash Bisque

This was a really good recipie. We didn't know that butternut squash was so good! Also, my husband (who likes helping in the kitchen as long as it involves using knives and / or chopping) had no problems using a potato peeler on the squash. This was a quick, easy and delicious recipie.

Thai Red Chicken Curry

I was disappointed with the flavor of this recipie. I thought it sounded fabulous and tried it last evening. It didn't have much taste to it. Could it be the lite coconut milk? I even used extra curry... If you like a mild tasting dish, then this may be for you but if you like a bold flavor - I would recommend making some changes.

Pumpkin Chip Muffins

I look forward to these every fall and winter! I agree that less oil is a good idea and making mini-muffins (with mini chocolate chips) is a great idea too. These make a delicious dessert, addition to meals, quick breakfast or chocolately snack

Rich and Simple French Onion Soup

This was a great recipie and SO easy! I made it without the sherry and served it to to my boyfriend and friends and they all loved it. I have made it twice in the past two weeks and we love it. I even used cheap Campell's beef broth and less butter/oil... still great! It's delish and simple! The thyme is the best ingredient! I will absolutely make this again and again!

Quick and Easy Vegetable Soup

This was such a great recipe! I had just gotten back from a trip to Spain and was desperately craving some veggies (after eating tons of bread, ham and fish for two weeks) and found this recipe. It turned out to be delicious! I left out the creole seasoning (because I didn't have any) and added in a small can of peas, small can of corn and some garlic. I would highly recommend this!

Apple Crisp II

This was just what I was craving! :) I didn't really read many of the reviews before I started baking but I would agree that you could cut back on the sugar and add more cinnamon. I used granny smith apples and it turned out wonderfully! Overall, it's excellent!
