The Best Banana Bread

A delicious basic recipe that should be in everyone's recipe box! The ingredient list is nice and short, and most of it is readily available in ones cupboard at anytime! I made this bread but used 1/2 cup butter and 1/2 cup white sugar and 1/2 cup packed light brown sugar and I added 1 tsp. vanilla. I also used super ripe speckled banana's and coated the pan with a light layer of butter. Baked for 55 minutes at 350 degrees and this bread came out slightly dense, fluffy and moist. A family hit here in this household... even with the 6 1/2 yr old who loathes bananas!

Eggless Tofu Spinach Quiche

An instant family favorite! Delicious and easy to make - did not veer from the standard recipe, however next time I will double the recipe, skip the crust and bake in a 9x13 to feed my family of 6! Note: I would recommend a food processor instead of a blender - I have a Cuisinart food processor and it is worth every penny! Made the tofu mixture super smooth and creamy.

Apple Cinnamon Oatmeal

This is an excellent oatmeal recipe. I was looking for one that I could make for our 10 month old twins. I used 2 gala apples instead of 1 and I blended it to a chunky consistency and added about 1/2 a cup of apple juice to reduce the thickness. Our babies are very picky eaters and both ate this without hesitation. It was delicious! Definitely great for babies, children and adults and VERY EASY TO MAKE! Enjoy!

Applesauce Oatmeal Cookies

Surprisingly delicious and wholesome after reading some of the reviews on these cookies! I was looking to use up some applesauce and oatmeal and have now discovered a healthy cookie, that even my pickiest child likes! I did use cinnamon applesauce instead of plain and about 1 tsp. cinnamon instead of the 1/2 tsp. the recipe called for, as well as 1/2 tsp. vanilla (since so many people said the cookies were bland) The results were 24 very nicely sized cookies and delicately sweet. Very fluffy and a bit like cake. Moist and not oily! The only thing I will do next time is add raisins.
