Orange Pecan Muffins

I made these for dinner guests to go with quiche. They were great. I plan on keeping this as my new "base" muffin recipe. Add any liquid for the orange juice and any filling of marmalade consistency. I used apple butter (had no orange marmalade) and was surprised they turned out so delicious. Next time I may try cranberry juice with whole cranberry sauce, and maybe a few craisins...the possibilities are endless

Sausage Squash Skillet

Always found squash to be so bland, but the sausage really gave it a good flavor. I doubled the amount of squash and it still came out so flavorful. Tried the croutons, but didn't think they added anything to the dish. Served over brown rice

Amber's Super Stuffing

Way too much poultry seasoning for me - think I would leave it out altogether. Also would use only half of the wild rice called for. Loved the mushrooms, celery and onion though.

Almond Rice Pilaf

This was a great side dish. I used green onions which gave it some color. Mild taste really compliments any stronger flavored main dish.

Colcannon

This was very good. Had just returned from the hospital, was feeling tired so I used only things I had on hand. To make it easy I actually used instant mashed potatoes and a bag of shredded cabbage that I cooked until soft. Sauted some green onions in butter and mixed all together. Surprisingly delicious and fast.

Corn Dip

Added a whole envelope of taco seasoning to add some flavor. Was very good but not too pretty to look at and guests had a tendency to pass it up in favor of the taco soup I also served. Should have served it as an appetizer where it would have have no competition.

City Chicken

This was so good. My Grandma Kokjohn, who lived in Ft. Madison, Iowa used to make this alot back in the 1950s. It was my favorite meal - she would serve it with mashed potatoes, creamed peas or carrots and homemade applesauce. I think she used the egg wash and cracker crumbs, but I thought I would try the flour and it came out great. Brought back some sweet memories.

Yummy Honey Chicken Kabobs

Super great taste!!! I doubled the marinade because it didn't look like it would be enough - glad I did - was perfect. I put foil, with holes poked in it, on the grill grate before grilling- helped to keep the kabobs from getting burnt.

Onion Rice

I tripled this recipe for a crowd. Served it with "Yummy Honey Chicken Kabobs" from this site. Everyone, including 3 teenage girls, loved it. Used Vidalia onions - nice taste but rice was rather bland looking -no color. Next time I might add chopped carrots or fresh parsley to make it look more inviting.

Spicy Bean Salsa

This salsa is great. I added 1 extra can of diced tomatoes. Be sure to use the unseasoned blackeyed peas and black beans to avoid conflicting flavors. I made my own Italian dressing using the Good Season packet but giving it a southwest twist by substituting lime juice for the water and added 2 teaspoons of cumin. I doubled the recipe so that after company leaves, we will be able to enjoy some for ourselves for a few days...just gets better as it sits in fridge.

Coconut Cream Cake I

Great recipe!!!And so easy!!! I simply frosted it with Cool Whip Lite a couple hours before serving, then topped with coconut and refrigerated until time to serve. Everyone loved it.

Kraft's Creamy Lemon Pie

Was surprised - it was very good! Guests liked it because it was light, yet nice and creamy. I liked it because it was super easy and quick to make. The filling was quite generous - made two 6" pies.

Homesteader Cornbread

Delicious!! Was expecting a crowd for chili, so I doubled the recipe using a 9x13 AND a 9x9 glass baking dish and baked cornbread at 350 for about 50 min. Came out great...nice and deep, not flat. I also used half milk, half soy milk and heaping tablespoons of baking powder as suggested. Everyone loved it.

Grilled Bruschetta Chicken

What a great recipe! I have made it several times now. My husband, who does not like "the white meat" loved this. I used already prepared bruschetta from Sam's Club to top the chicken breasts....so easy and so good! One time I even forgot the cheese and it was still delicious.

Baked Ziti I

This is a great recipe. I've made it twice, both times making a triple batch. It freezes well. Husband, grandkids loved it. Also took it to church potluck and it was a hit.
